Italian Spaghetti Sauce with Meatballs

Bland. I guess I am just picky over pasta sauce. If you're comparing this to Ragu, Prego, or some other cheap, store bought sauce, I guess it's ok. But even after adding extra seasoning, simmering longer than called for, and letting it sit overnight, this still tasted like canned tomatoes. Sorry.

Oriental Cold Noodle Salad

the balance of flavors is off. There is too much lime and vinegar--it's actually quite sour. Next time I will reduce the amount of these two ingredients and I think it will be fantastic. Maybe add more soy sauce and sugar.

Restaurant-Style Buffalo Chicken Wings

These are great! After frying them crisp (but not completely cooked) I drained them on paper towels then transferred them to a slow cooker. I poured the sauce on, tossed them to coat, and cooked on low about three hours before a party. They were tender and juicy, with a terrific flavor.

Corn Pudding V

There is a rib joint nearby that makes a terrific "corn pudding" and I have been trying to find a similar recipe. Most end up as more of a custard, and I was looking for something akin to Kentucky "spoon bread"--soft, moist corn bread. Well, this is it! A cake consistency, like corn bread, but the creamed corn and sour cream make it so soft and moist you really can use a spoon to eat it! This recipe is wonderful in its simplicity--you can add all sorts of things to it! I added some shredded cheddar, chopped green chiles and a little ground red pepper. This is a fantastic side dish to accompany summer grilling--I love it with bbq ribs and chicken. Thanks Becky!

Spanish Chicken and Rice

I love it when a recipe that I don't expect too much from blows me away. This is so good! The rice alone is worthy of 5 stars. I added a little seasoning salt and red pepper to the flour mixture, as some reviews called it bland. This will become a staple at our house.

Easiest Peanut Butter Fudge

I think I added too much peanut butter because when I mixed everything together it was very thick, like a cookie dough. So I added a little milk and, viola, creamy delicious pb fudge! Awesome!

Award Winning Peaches and Cream Pie

We couldn't hold ourselves back and first tasted this while it was still warm from the oven. I was a little disappointed. The next night, after it had chilled in the fridge, we ate it again. Wow, delicious! As difficult as it is, make sure to let this chill completely! EDIT: I wanted to make something sweet for my diabetic mother, so I switched in Splenda, sugar free vanilla pudding mix, skim milk, "light" canned peaches, and reduced fat cream cheese. It was still amazing! My oldest nephew called it "award-winning," and he didn't even know the name of the recipe!

Mediterranean Pizza

Following other reviews I used non-marinated artichokes, omitting the "juice" altogether. Before adding any ingredients I mixed dried herbs (oregano and basil) into olive oil and brushed that all over the crust. I layered fresh basil leaves over that, then followed with the listed ingredients. Tip: Don't use ham, use SALAMI! I use fresh cherry tomatoes, as called for, and think they taste terrific. This pizza looks amazing and tastes even better!

Peanut Butter Balls I

I placed the peanut butter mixture in the freezer and let it solidify. I used a Tbsp scoop to form the balls, then used chopsticks to dip them in the chocolate. This made it easy and minimized the mess.

Spinach Dip with Water Chestnuts

Definately double the spinach or else it will come out too creamy. I keep everything else the same except I add 1/2 cup SHREDDED parmesan cheese and make it the night before so that it sits for about eight hours, not two. Really, the extra time improves the flavor. And do use all the water chestnuts called for--they impact the flavor very little but add a terrific texture. Also, the best way to drain the spinach is to place (thawed) spinach between two large dinner plates and squeeze them together over the sink. The liquid drains, leaving the spinach neat and dry. I find this much less messy than actually "squeezing" the spinach. I make this for all family events. Everyone who tries this loves it!

Grilled Chicken Breast with Cucumber and Pepper Relish

After reading reviews I added italian dressing both to the meat marinade and the relish. I used pork chops rather than chicken and broiled them in the oven. Very tasty!

Vidalia Onion Pie
