Crustless Spinach Quiche

Oh, YUM!!! This was OUTSTANDING! My boyfriend exclaimed, "This may be the best quiche I've ever had in my life." I'm doing Atkins, and I was searching for something different for breakfast and decided to try this. I used a bag and a half of fresh baby spinach because that's what I had, and I added a 9.6 oz. bag of fully cooked breakfast sausage crumbles to brown with the onions while they cooked. I also added more salt & pepper to the whole mixture before pouring into the pie plate and it came out perfect for our tastes. This came out full-bodied and perfect textured, too. Sooooo delicious!!!

Rosemary Rice

I really liked this. I bought fresh rosemary for another recipe and was looking for something to do with it for a side dish. I made it exactly as directed except that I used water and bouillion granules instead of chicken broth, which I did not have, and used jasmine rice because it was all I had. I did not find the rosemary to be overpowering at all, as other reviewers stated. For me it was just perfect.

Baby Spinach Omelet

I loved this. I'm eating low-carb and really needed something different to do with eggs in the morning. Spinach and nutmeg go so well together, I can't imagine skipping the nutmeg. I just used a medium skillet and filled it with fresh regular spinach, salted & peppered, covered, and let it wilt while I beat the eggs with the onion powder, nutmeg, parmesan and a splash of water for fluffiness, then poured over the wilted spinach. This is super quick, easy and very tasty. It will definitely be in my regular rotation, thanks!

Sopapilla Cheesecake Dessert

Wow! I tried this for the first time, following advice from other reviewers, and my boyfriend went crazy over it! He said it's among the best things he's EVER had and said I have to make this the next time we have company. I found it quite easy to make, too. The changes I made were: cut sugar in cheese mixture to 1 c., add an egg, sub 1/2 c. sour cream for last 1/2 c. cream cheese and add extra tsp. vanilla. I melted all the butter and used all the sugar called for in the topping mixture, but added an extra tsp. of cinnamon. I ended up only using about half of the butter and the sugar mixture in the end because I was afraid it would be too greasy and sweet for our tastes. I also cut the baking time to 35 minutes and served with vanilla bean ice cream right out of the oven...I had no problem with cutting it at all. This was INCREDIBLE and will be my go-to dessert to impress people when I feel like impressing someone. Thanks so much for posting! :)

Cheesy Butternut Squash Pasta Sauce

I thought this was delicious! I did use extra garlic and onion and quite a bit of salt and pepper to accommodate our tastes. I used an immersion blender at the end to smoothe the sauce out and served it over plain cheese ravioli and was very pleased with the result.

Manicotti Alla Romana

I just served this to company last night and one of my guests who is a pretty picky eater called it "phenomenal" so I thought I just had to rate it. The only complaint I had was that the Italian sausage I used was a little too heavy on the fennel for our tastes, but even with that it was still delicious. I will definitely get a pastry bag and tip for the next time so the filling process is a little easier, but I will be making this again. Yum!

Egg and Cheese Puffs

These are wonderful! I stuck to the recipe except I halved the melted butter, splitting the difference between the recipe and the reviews that suggested eliminating it altogether. I sprayed my muffin pan with Crisco butter flavored cooking spray and had no problem at all getting the puffs out of the pan. I think next time I will cook the bacon in the microwave since frying the bacon in the skillet was the messiest and most time consuming part of the process for me. Great recipe!!!

Chicken Cordon Bleu II

WOW!!! Wow... just finished this and had to drag myself out of the kitchen so I didn't spoon every last bit of the remaining sauce into my mouth! This was outstanding and definitely deserves as many stars as are available. I modified half the recipe so that it was Atkins-friendly for me, leaving out the flour and cornstarch parts and made it a dipping sauce, while making it as directed for my bf. Trying some others' suggestions I spread a little dijon on the chicken and rolled the swiss up in the ham before wrapping the chicken around it. The breast halves I bought were so thin that all I did was brown all sides for 10 minutes total in the skillet and followed with 10 minutes at 350 and they were perfect! I figured finishing them in the sauce in the skillet would lead to the "poached" look that others have complained about. I just couldn't be happier with how they turned out. I will definitely be making these for company at every opportunity. Thanks so much for the wonderful recipe!!!

Grilled Chicken Salad with Seasonal Fruit

This is a terrific recipe that won me rave reviews from my guests. I made a few changes based on other reviews and what I had on hand or couldn't find in the store, but I think the dressing is the cornerstone and the star of the show that makes this recipe 5-star and extremely versatile. I made this underway on a sailboat, so to save steps I skipped marinating the chicken as other reviewers suggested, though I thought I might regret it. Instead, I sprinkled the chicken with a mixture of a little bit of (believe it or not!) Montreal Steak Seasoning, Everglades Seasoning, garlic powder and cinnamon (sounds weird, but is delicious!) on one side and salt & pepper on the other. This blend of flavors, though off-the-cuff, went beautifully with the flavor of the dressing. My grocery store didn't have Bibb lettuce, so I bought pre-packaged Boston mix, which turned out looking just as pretty. I used strawberries, blueberries and mandarin oranges, arranged prettily with the pecans, creating a beautiful color contrast. I did as other reviewers suggested and cut the amount of oil, but maybe too much as the dressing was a bit too runny. I agree that blending (instead of just whisking) the dressing is a step you don't want to skip if at all possible. I sometimes wonder why people give recipes 5 stars if they make all kinds of changes to it, but this really deserves it whether you customize or not.

Quick and Easy Chicken Noodle Soup

Exactly what I was looking for, thank you for posting! I was feeling nauseous like I was getting a stomach bug and homemade chicken soup was the only thing that remotely appealed, but the last thing I felt like doing was cooking! I only knew of the whole-chicken, starting from scratch method and all I had was chicken breasts, so this really saved the day! I had to improvise based on what I had, but it still came out as exactly what I was craving. Definitely satisfying and INFINITELY better than any canned soup would ever be. Thanks again!

I was thrilled with the reaction I got when I made this.... all the guys raved and the one who never has seconds had seconds! I had to improvise since I didn't have capers or olives- I threw in a little homemade pesto I had on hand instead. I can't wait to try it the right way, though. Thanks for the great recipe!

Shrimp Creole III

This recipe gets 5 stars from me, because it gave me the basis for what turned out to be a big hit with my picky boyfriend. I modified it by adding chili pepper paste and smoked baby clams because I had them on hand, and it was DELICIOUS! Usually he adds hot sauce to everything I make, but not this time!
