Cheesy Ham and Hash Brown Casserole

I really screwed this up and it was still good! I used what I had instead of using measurements - I was pretty close. I didn't have any soup - so I skipped it and I forgot the parmesan. I gave this 5 stars because even when I messed it up, my family raved about it. I was GREAT!

Mulligatawny Soup I

I skipped the cream completely because I didn't have any. Didn't miss it! I also used leftover rotesserie chicken and brown rice. Next time I will use more rice than they call for. I doubled the recipe and my family of 5(with one teenage boy) ate it up. Better than the recipe in my little box!

Cafe Mocha Mini Muffins

I loved them- so did the family. I made big ones and then I added Cappucino chips with the chocolate chips. Really great for Mommy's late afternoon snack!

Easy Picadillo Empanadas

I loved the mixture of tastes all in a neat package - and it was easy to make and double the recipe. I have two more dinners sitting in the freezer! Watch the cook time, 450 is too hot for 16 minutes. They would have burned - it was closer to 11 minutes!

Balsamic and Rosemary Grilled Salmon

Salmon is such a good tasting fish anyway, this is just not a flavorful enough marinade to put on this fish. I am not the greatest cook, so I will chalk it up to that. Otherwise, cooking it for 4 minutes per side was pretty accurate.

Broccoli Coleslaw

This can be oil-y. I use four 12 oz. bags of pre-cut broccoli slaw, 1 cup oil, 1 cup vinegar, and 1 cup sugar. I put the ramen in with the salad to soak up some flavor, but put the seeds on at the last minute. This amount feeds a picnic of 12 with enough leftover to ravage for the lunch right out of the bowl the next day.

Mocha Fudge Cake

I had leftover coffee from one of those big Starbucks boxes and used it in this recipe. It was easy! The end result looked and tasted like I was a better cook than I am! I also had all the ingredients on hand already - bonus! I am bringing it to work to impress the people that know I burn brownies!
