Leftover Pancake Breakfast Sandwich

If this is a knife and fork sammie, why break the yolk? It would just add some extra sauce to the mix-otherwise a great meal-I used bacon, but sausage patties would be equally good!

Alternative Baked Salmon

This was Excellent! My fish guy at the grocery makes something vety similar to this, and my son loves it. Now I can make it at home at a fraction of the cost. I did make some changes--4 T. bottled garlic (we LOVE garlic), 4 T. mayo, and 2T. lemon juice went into the stuffing, along with a few shakes of Tobasco sauce. (I agree with another reviewer---why wold anyone use dried garlic in the first place?) Next I'm going to try it on catfish fillets.

Baked Honey Nut Chicken

This recipe was EXCELLENT!! My son and I usually eat legs, thighs, and wings as breast meat tends to be dry, but this was not the case in this recipe. I used boneless, skinless breasts, and watched the baking time closely. It still took approximately 30 minutes, but they were done to perfection--crispy on the outside and moist and juicy on the inside, with just the slightest hint of honey flavor. I served them on a bed of spring greens and drizzled them with ranch dressing and served garlic crescent rolls on the side. DELICIOUS!! Next time I'm going to try this coating with catfish fillets on the stove top. Thank you laurag, this is now in my permanent file.

Brownie Pie

I took this to a potluck at work today, and there wasn't a crumb left! I modified it with mini choc. chips, chopped nuts, and maraschino cherries on the whipped topping. For my family tonight, I made individual parfaits using chunked brownies, pudding,and whipped topping. Repeat layers, ending with whipped topping, mini chips, and ,of course, a cherry on top. That was a big hit, too. If you are a true chocoholic, a drizzle of chocolate sauce could be used as well.
