Lentil Chili

I've never cooked anything with lentils before. So I was pleasantly suprised how delicious this turned out. Very low fat (5pts per serving) and freezes great! Will make again and again. The only alteration I made was using "italian style" ground turkey.

Quick and Easy Alfredo Sauce

This was so easy and delicious! Alfredo sauce is my favorite - and this recipe is almost as good as resturant quality. * I also used lowfat cream cheese, and low fat parm. I don't think it makes a difference in the taste.

Easy Batter Fruit Cobbler

This recipe was very easy and tasted great! My husband loves cobblers so I play around with a few recipes, this one is the best! I used 12 oz. of frozen raspberries instead of fresh fruit. Yum!

Regular Crepes

This is a really good recipe! I filled ours with fresh strawberries (sauted)and put them on top of a chocolate sauce drizzled plate, and topped it off with powdered sugar! We served these for Mother's Day breakfast, they were a hit!

Dill Potato Salad

This recipe was not for us. I served it over Mother's Day weekend, and no one really loved it. My Step-Father added mayonaise to "choke it down". Heh. Majorly lacked flavor! The dill was a nice though, maybe I will try omitting the sour cream, and subing in Mayo.

Delicious Raspberry Oatmeal Cookie Bars

I made two different kind of Raspberry oatmeal bars this weekend (see my other reviews), these were definetly not the best. I found them to be really dry, and lacking flavor. I think if there is a next time, I would add more butter as they were super crumbly and difficult to eat.

Raspberry Oatmeal Bars

Wonderful and quick recipe. I also only had lemon cake mix on hand, and they turned out wonderful. I also substitued the water for lemon juice. A few tips: - Do not overbake, or they will be very dry. Mine took only 16 min. to bake completely. - Make sure your butter is completely melted. - Cut the squares, when they are completely cooled or they will crumble on you! Enjoy!

Shredded Beef Chimichangas

This is a wonderful recipe, and it's so easy to make. I did make a few modifications however. I put the beef chuck and the wet ingredients (including spices) in a crock pot, so I wouldn't have to mess with it. The meat came out so tender when cooked on low for about 8-9 hours. I also used sharp cheese with Jalapenos in it. That really added to the flavor. Instead of putting the cheese on top, I put it inside, and it melted nicely. Finally I chopped lettuce and tomatoes and spread them on top of the chimichangas. Delicious! We have left over meat, so I'm going to turn that into burritos for tomorrow's dinner. This recipe makes HUGE portions. Enjoy!

Chicken Thigh Fricassee with Mushrooms and Rosemary

I had high hopes for this recipe, but it just isn't something that I would make again. I don't really like chicken thighs, I find them very fatty, so maybe if your substitue chicken breasts it would be better. I would recommend using high quality wine as you can really taste it in the chicken. Be careful how much rosemary you use. That may have been the problem with mine. I didn't have any fresh so I used 1 tbsp dried instead. All in all it wasn't worth the hour wait plus prep time.

Simple Beef Stroganoff

This is a good recipe for a fast dinner. I omit the sour cream because it makes the sauce a little too thick for me. Instead, I add enough milk to compliment the cream of mushroom soup. I also like to add a few fresh cut mushrooms if I have any on hand. This makes great leftovers!

Angel Chicken Pasta

This recipe was good. I had to double the sauce though, as there wasn't enough to properly coat the angel hair. I thought it would be better because of the 5 star rating. It was good enough to make again though. * Make sure you use really good white wine, it makes a difference.

Chicken Marsala

My husbands favorite meal is Chicken Marsala. So much so that we had it at our wedding. This recipe is quick and EASY! We both loved it. I did make a few changes :) I doubles the sauce and made a rue, then served it over angel hair pasta instead of rice. You must try this recipe. Its devine!

Banana Crumb Muffins

This recipe is wonderful. My husband doesn't care for bananas all that much, but he loved these muffins! I would prefer them to be a little less heavy on the butter though.
