Indian Chicken Curry I

Not a keeper for me. It was not very flavorful. Based on other reviews, I used 3 diced Roma tomatoes in place of the tomato sauce and added a touch of chicken broth to make up for the loss in liquid. Had to add a LOT of extra curry powder, cumin and salt to make it flavorful.

Almond Strawberry Chia Seed Pudding

Spinach and Mushroom Frittata

Good. I sauteed half an onion with some bacon first, then wilted the spinach. I beat the eggs separately, then added the cheeses before mixing in with spinach mix.

Ricotta Gnocchi

Yum...yum...Oh my friggin' God...yum. Made my own meat sauce instead of the one included here. But even plain, these gnocchi were GOOD!

Italian Roast Beef I

YUMMY! Instead of using bouillon cubes, I used broth leftover from cooking some brats; omitted the oil and the whole part of coating the roast with oil and spices; I just tossed all of the spices in with the broth in the slow cooker and let it go for 4.5 hours, turning it half way through. So tender and tasty. And yes, it's spicy; but then again the pepper flakes are an optional ingredient.

Barley, Lentil and Mushroom Soup

Yum!!! Used homemade chicken broth instead of beef and a barley/wild rice blend instead of just barley because that's what I had.

Spinach Brownies

Yum! I did make some changes. 1) First I sauteed the onion and some garlic in olive oil. 2) Then added 10 oz fresh spinach until it wilted. 3) Did not use butter.

On Wisconsin Beer Brats

This turned out to be a surprising success at yesterday's party! Instead of 3 cans of light beer, I used 2 bottles of Guinness and then 12 oz of beef broth. And I did not use sauerkraut. The brats were mushy, but it wasn't gross mushy. Several people commented on how tasty the onions were. Score!

Sweet and Spicy Curry with Chickpeas

Awesome recipe but I did make lots of changes as follows: 0) used bacon grease to cook up onion 1) did not use turkey - didn't have 2) used a whole can of coconut milk plus at least one cup of chicken broth 3) threw in 1 cup rice and cooked it in sauce 4) did not use chili sauce - didn't have 5) added peas at end

Rhinelander Lentil Soup

Easy and simple recipe. I used freshly made chicken broth and did not add the potatoes just because I didn't have any. Based on lots of reviews saying that they needed to add lentils and more veggies, I took the other route and only used about 6 cups of broth and it was fine.

Garlicky Quinoa and Garbanzo Bean Salad

This was a simple, quick, tasty and healthy recipe. It wasn't an OMG thing, but definitely something I will keep handy for a quick meal. From reading it, I was worried that it would be a little bland, so I sauteed about 1/4 cup each chopped onion and green pepper, then added the quinoa and water along with a bouillon cube. Once it was done, I still found it bland, so I added some cumin and smoked paprika.

Indian Curry Couscous with Broccoli and Edamame

Moussaka

Very good! I made the meat sauce as written. Cooked the eggplant slices in the oven at 400 for about 40 minutes, until they where soft. I skipped the bechemel sauce part, just because I was lazy. So I simply mixed the eggplant in with the meat and it was good! Thanks for the recipe.

Curried Coconut Chicken

I think adding the sugar was a mistake for me. Taste it first before adding, then gauge how much to add (if any). I used a rotisserie chicken so I didn't have to wait so long for things to cook. And I added a can of peas at the end just because I love peas in curry.

Coconut Tofu Keema

LOVED it but my review really doesn't count since I completely changed the recipe based on what I had in the kitchen: 1) Pressed weight on tofu for about 1/2 hour to drain it 2) Shredded 1/2 green pepper and some onion on food processor. Cooked in olive oil until soft 3) Shredded tofu and added to pepper/onion for 5-10 minutes 4) Add coconut milk with lots of extra cumin & curry; pepper flakes instead of pepper paste 5) Add 24 oz jar of basil tomato sauce instead of tomato sauce 6) Added 2 diced tomatoes 7) Added 1 can peas
