Beet Soup

After cooking for 30 minutes, the broth had great flavor. Then I blended the soup and it had the consistency of thick grainy pudding. It would have been great if I had not put it in the food processor. What a waste of beets. I even added some more beef stock to try to smooth things out and it was still grainy.

Mile-High Peanut Butter-Brownie Pie

I don't think I will be making this very often - because I could have ate the whole darn pie myself! Oh my! This one is a keeper. Followed the recipe exactly. It came out perfect and was firm enought to cut into small pieces which was necessary because it is very rich. I read the other reviews and wished I had used chopped up peanut butter cups too. If cutting the pie when it is cold it is hard to cut - let it sit out for a bit and it makes cutting much easier.

Easy Canned Venison

In the past I have done something similar but only used kosher salt. The minced garlic and onion add to it. I love having the meat canned - it is super easy to make deer and noodles or stews/soups

Sam's Famous Carrot Cake

Great cake. I did make a few revisions though. I only added 1/4 cup of oil and I added 1/2 cup unsweetened applesauce. I increased the carrot to 3 1/2 cups - after all it is carrot cake right.. I followed another persons advice and I ran the pineapple through my food processor before mixing it in. I did not add the coconut or rasins. Used pecans instead of walnuts and frosted it with cream cheese frosting and topped with toasted pecans. I am guessing that had I followed the recipe exactly it would have been much heavier. I kind of felt like adding the coconut and rasins would take away from some of the carrot flavor. But overall - the cake was a success. Thanks

Cream Cheese Filled Pumpkin Muffins

These were good - I followed the recipe except for using pecans instead of sunflower seeds. I also replaced 1/2 of the oil with applesauce. These came out moist - my kids liked them but they were not overly excited about the cream cheese - I think I would have liked it better had I added a little sugar to the cream cheese.

Kiki's Borracho (Drunken) Beans

AWESOME!!! I did not add the beer. I did not have any and I think it may not have needed it. I seeded one jalapeno and quartered it. That added plenty of heat. However, after soaking the beans overnight I put them in the crock pot on high at 7 AM. By 3 PM the beans were still hard. I had to put them on the stove in order for them to be ready by 5-ish. This recipe was a big hit. I think it would be great with ham or chicken in it. But it made a great side dish for a mexican dinner.

Baked Havarti Chicken

This recipe was pretty good. However, I did not follow the recipe exactly. I only had chicken tenders - marinated them in italian dressing then grilled them. When I made the mushroom sauce I added onions - tripled the sauce (but only added 1 TBS of worchestershire. Used fresh garlic rather than the garlic salt. When I finished grilling the chicken I put them in the skillet and added the chili peppers and cheese then covered it for a minute. Served with wild rice and broccoli. It was a nice and quick recipe - a little on the salty side though.

Luscious Turkey Bacon Refried Beans

These beans were good - but..... I was skeptical about the bacon in refried beans. I should have followed my instincts. Maybe I shouldn't have followed a few reviewers advice and added in the cooked bacon at the end of cooking.It added a very strange texture that did not go well with refried beans. I tasted it before I put the bacon in and loved it - would have given it 5+ stars. It was similar to the beans you can get in many authentic mexican restaraunts. It also took considerably longer to cook than stated. Once adding in the chicken stock it took a little over 2 hours. So that was 3 hours total for a side dish. However, the time issues didn't bother me as much as adding in the bacon ruined the dish. Perhaps putting the bacon in at the beginning of the cooking process would have changed the end result. But bacon in this dish is not needed. The cilantro is a must. I have made this dish several more times with out the bacon - 5 stars for sure. I always double the recipe and use the leftovers later in other dishes.

Marzetti® Italian Penne Pasta Salad

Does anyone know where you can get Marzetti dressing? I went to 4 grocery stores and no one even carried the brand. So I made the recipe with Briannas home style asiago cesar dressing. Used black olives instead of kalamata olives. Used dehydrated tomatoes I processed last year instead of the ones packed in oil. And added probably 1/4 cup of the dried tomatoes. Overall the flavor was good. I grilled my chicken and served it separate from the rest - I wasn't in the mood for cold chicken. Next time I will probably try a peppercorn dressing - but overall it was a success.

Poor Man's Caviar

YUM! This was not a particularly pretty dish but it tasted great. I used 3 avocados and after I chop them up I squeeze some lemon or lime juice on the avocado, red onion instead of green onion, and about a 1/3 cup of chopped cilantro. I have tried it with the dressing listed in the recipe and also tried it with Italian dressing and liked the Italian dressing better. Make sure your avocados are firm yet ripe. Don't mix everything until all of the ingredients are in the bowl. The more you stir it the uglier it looks.I have also used canned tomatoes instead of fresh and it worked out fine - just drain the tomatoes well. A can of rotell tomatoes adds that extra heat if desired. This one is a keeper. Great with the Frito lay scoops! ADD SOME CILANTRO - IT MAKES IT EVEN BETTER!!

Italian Sausage Soup

Thanks for the great soup recipe. I did add onions and fresh mushrooms. I also followed the advice of others to use low sodium broth. It definatley had plenty of salt. I made the soup early in the day then cooled it and skimmed the fat off of the top. I drained the sausage after browning but there was still a lot of grease. I also added a can of black beans instead of the great northern. The soup was even better the next day. I have tried making this soup with turkey sausage and it was ok but it is definatley better with regular sausage. The turkey sausage was kind of rubbery.

Vegetable Ham Stew

This was good. I didn't add the cornstarch and kept it as a soup. All kinds of vegetables could be added to this. Great way to use leftover ham. I used 2 cups of low sodium broth and 2 cups water. Glad I used low sodium broth because my ham was pretty salty to begin with.

Panuchos

I have made these a few times. I have used shredded chicken and also recently tried shredded deer roast and it was equally good. I sliced avacado and squeezed lime juice over the avacado. I also usually top with cilantro. This recipe is an easy one to try out on company.

Hot Buttered Rum Batter - Modified 12-27-09

Mmmmm - My uncle makes Tom and Jerry drinks every Christmas eve - this tastes almost identical. I did not use a full cup of butter (maybe 3/4 cup) - next batch I will try making it with 1/2 the butter.

Sausage Jalapeno Poppers

This recipe is a keeper. I followed someones advice to halve and clean the jalapenos under cold water - that worked very well. I wore gloves and did not have any trouble with fumes. I cleaned the peppers the day before I needed them and waited to stuff and wrap them till the next day. I only used one pound of sausage - added a cup of chedar cheese, a little onion powder and some siracha (hot chili sauce). I had only cleaned 25 peppers and I did not have enough filling for all of the peppers - I used 2 1/2 pounds of bacon. Brushed the bacon with honey before baking - broiled the last few minutes. It was the first appetizer gone and I had several requests for the recipe. When I cleaned the peppers I removed all of the seeds and ribs - there wasn't hardly any heat so even those who don't like spicy foods were able to try them. The only downfall was the time it takes to prepare them - well over 2 hours.

Southern Praline Pecan Cake

Nothing spectacular and not worth making again - very sweet. I pretty much followed the recipe except for the pecans. It crumbled apart when I went to take it out of the bundt pan.

Fresh Tomato Shrimp Pasta

Easy to prepare - but was missing something. My husband and I tried several different things. Siracha, parmesean, more salt and pepper and it was still lacking. It needed more spinach too. I wanted to like it..

Very Special Spaghetti Sauce

I would give this recipe a -10 if I could. I followed the recipe except I drained the fat before I added the flour. I bought my favorite bottle of dry red wine. I could not even doctor it up so that I could keep it. I have made lots of homade spagetti sauces and this was by far the worst. Maybe leaving out the wine would have helped - not sure..
