Unbelievable Spinach Calzones

This recipe was ok but it was nothing to rave about. Followed the recipe except for using pizza crust. Dipping them in spaghetti sauce made them better.

Mushroom Blue Cheese Turkey Burgers

Surprisingly Awesome! I used ground turkey that was 85/15. Sauteed mushrooms and onion, used only 1 TBS of soy and 1/2 TBS of worcestershire. I probably used more than the recipe called for with the blue cheese. I did not add the salt. I brought these to a cook out - put them on a big flat skillet with tin foil covering the skillet and cooked them over an open flame. The trick to them not falling apart is to not turn them too much. Great flavor - I had brought ciabatta bread, mayo, tomato to go with them - everyone liked them better plain with no bread or condiments. Now I can see why a few reviewers said they made meatballs out of them.

Black Beans and Pork Chops

Very Nice! Easy to prepare - pork chops came out super tender. I used boneless butterfly pork chops and they were fine. Served with rice made it vaguely reminiscent of beans and rice.

Sausage and Bow-Tie Pasta Florentine

Glad I didn't have company coming over for this recipe. It wasn't horrible but wasn't great either. I used turkey Italian sausage and the only other change was that I added a can of diced tomatoes. The tomatoes helped! I'm not a huge fan of the jarred alfredo sauce but the one I bought was pretty good - it had mushrooms in it.Sorry but I don't see what was so fabulous about this recipe - very heavy - if you can make a meal of it you must have an iron stomach.

Poor Man's Caviar

YUM! This was not a particularly pretty dish but it tasted great. I used 3 avocados and after I chop them up I squeeze some lemon or lime juice on the avocado, red onion instead of green onion, and about a 1/3 cup of chopped cilantro. I have tried it with the dressing listed in the recipe and also tried it with Italian dressing and liked the Italian dressing better. Make sure your avocados are firm yet ripe. Don't mix everything until all of the ingredients are in the bowl. The more you stir it the uglier it looks.I have also used canned tomatoes instead of fresh and it worked out fine - just drain the tomatoes well. A can of rotell tomatoes adds that extra heat if desired. This one is a keeper. Great with the Frito lay scoops! ADD SOME CILANTRO - IT MAKES IT EVEN BETTER!!

Angel Hair Pasta with Garlic Shrimp and Broccoli

I thought that this recipe was average. The sauce tasted fine but once it was mixed in with everything else it was a little on the bland side. Maybe a bit more pesto would have helped. I used skim milk and skipped the heavy cream. It still had a rich taste and the sauce was thick enough without the extra fat.

Luscious Turkey Bacon Refried Beans

These beans were good - but..... I was skeptical about the bacon in refried beans. I should have followed my instincts. Maybe I shouldn't have followed a few reviewers advice and added in the cooked bacon at the end of cooking.It added a very strange texture that did not go well with refried beans. I tasted it before I put the bacon in and loved it - would have given it 5+ stars. It was similar to the beans you can get in many authentic mexican restaraunts. It also took considerably longer to cook than stated. Once adding in the chicken stock it took a little over 2 hours. So that was 3 hours total for a side dish. However, the time issues didn't bother me as much as adding in the bacon ruined the dish. Perhaps putting the bacon in at the beginning of the cooking process would have changed the end result. But bacon in this dish is not needed. The cilantro is a must. I have made this dish several more times with out the bacon - 5 stars for sure. I always double the recipe and use the leftovers later in other dishes.

Amish Breakfast Casserole

This casserole was very good. I did not follow the recipe exactly though. I made it with 10 eggs. Added about 3/4 cup of evaporated milk and also added a little sausage and some sauteed mushrooms. I like swiss cheese but was concerned that others wouldn't like it. The swiss wasn't even noticable. I think if I would have only put in the eggs that were suggested in the recipe it would have been very stiff. The extra eggs and evaporated milk made a nice consistency for the casserole. Will be making this recipe again.

Mary's Roasted Red Pepper Dip

Forgetable at best! - it looked like something the cat threw up. I only added 1/2 cup of mayo. Besides that I followed the recipe. After it cooked and I tasted it I added some pepper jack cheese and siracha to try to save it. The add in's made it a little better. I wish I wouldn't have taken it to the Christmas eve party - yuck!

French Toast Bake

Exelent recipe! I cubed the french bread - it is easier to serve and it soaks the egg mixture up better. I did add more eggs than the recipe called for - 9 in all. I also used 1 can of evaporated milk + skim milk to equal 1 1/4 cup. Added 1 tsp. cinnamon and cut nutmeg to 1/8 tsp. I baked it at 350 rather than 400 - gives the egg mixture more time to set up without burning the top. No problems with a soggy center. Not sure how long I baked it - I kept checking the center till it looked done.

Hot Artichoke and Spinach Dip II

Good flavor but it was so thick. Especially after it cooled it was hard to scoop up into a tortilla chip. I followed the recipe except I added a little siracha (hot chili sauce). I will definatley make again but will most likely add some sour cream to kind of thin it down some.

Stuffed Mushrooms with Spinach

These were pretty good. I followed the recipe except I used cream cheese instead of the heavy cream. I was worried that they would be kind of wet. Nice flavor. I had some extra filling and baked it in a dish and served with tortilla chips. I actually liked it better served with the chips. It gave a bit more contrast of textures.

Fabulous Zucchini Grinders

This was pretty good if you like zucchini. I split and toasted the rolls before filling them and they were still pretty soggy - kind of a turn off - but the flavors were good. My husband commented that a little bit of chicken would have made it better.

Steak Tip Marinade

Nothing spectacular. I almost gave it 3 stars but had to give it 4 because it was a convenient recipe. It called for ingredients that I always have on hand. I was hopeful when I read the reviews but it wasn't a big hit at the table. I used it with chicken breast and grilled them - maybe it would have been better with beef.

Spicy Bean Salsa

Nice recipe but it wasn't amazing. Missing something. I followed the advice of several people and used some fresh lime juice and olive oil. Added cilantro and used Rotell tomatoes instead of plain.
