Hot Artichoke and Spinach Dip II

Good flavor but it was so thick. Especially after it cooled it was hard to scoop up into a tortilla chip. I followed the recipe except I added a little siracha (hot chili sauce). I will definatley make again but will most likely add some sour cream to kind of thin it down some.

Stuffed Mushrooms with Spinach

These were pretty good. I followed the recipe except I used cream cheese instead of the heavy cream. I was worried that they would be kind of wet. Nice flavor. I had some extra filling and baked it in a dish and served with tortilla chips. I actually liked it better served with the chips. It gave a bit more contrast of textures.

Fabulous Zucchini Grinders

This was pretty good if you like zucchini. I split and toasted the rolls before filling them and they were still pretty soggy - kind of a turn off - but the flavors were good. My husband commented that a little bit of chicken would have made it better.

Steak Tip Marinade

Nothing spectacular. I almost gave it 3 stars but had to give it 4 because it was a convenient recipe. It called for ingredients that I always have on hand. I was hopeful when I read the reviews but it wasn't a big hit at the table. I used it with chicken breast and grilled them - maybe it would have been better with beef.

Spicy Bean Salsa

Nice recipe but it wasn't amazing. Missing something. I followed the advice of several people and used some fresh lime juice and olive oil. Added cilantro and used Rotell tomatoes instead of plain.

Ham and Cheese Bowties

For my husband and I this was a recipe that we could do without. I can't say it was bad - good flavor (I sauteed some onion in the butter when making the sauce) - but it wasn't to die for.The calories made it a bit hard to swallow. Good way to use leftover ham - my kids liked it which was a surprise because they don't generally like cassarole type dishes. Reheated the next day and it wasn't all that great. However - it tastes much better than it looks.

Cheesy Ham and Hash Brown Casserole

Not bad. I added a lot more ham than the recipe called for. I would not use it as a main dish but it would work well for a side dish at a brunch potluck type situation. Flavors were good/average - nothing spectacular though.

Amy's Cilantro Cream Sauce

This was a nice addition to my recipe box. As long as you like cilantro and a bit of heat this is a nice topper for a variety of meats or to use in wraps. I added a half can of the salsa then tasted it and gradually added more. I ended up using most of the 7 oz can but didn't want to make it too hot for guests.

Southwestern Egg Rolls

These were just OK - I followed the recipe except that I used cilantro instead of parsley and I baked them rather than frying. They were kind of bland - not as interesting as I had imagined they would be. Maybe adding some more spices would have helped. I topped them with the cilantro cream sauce and that stuff rocks - I'm thinking that I could use that for a lot of grilled recipies. I most likely will try this recipe again but it will need a bit of help.

Sausage Jalapeno Poppers

This recipe is a keeper. I followed someones advice to halve and clean the jalapenos under cold water - that worked very well. I wore gloves and did not have any trouble with fumes. I cleaned the peppers the day before I needed them and waited to stuff and wrap them till the next day. I only used one pound of sausage - added a cup of chedar cheese, a little onion powder and some siracha (hot chili sauce). I had only cleaned 25 peppers and I did not have enough filling for all of the peppers - I used 2 1/2 pounds of bacon. Brushed the bacon with honey before baking - broiled the last few minutes. It was the first appetizer gone and I had several requests for the recipe. When I cleaned the peppers I removed all of the seeds and ribs - there wasn't hardly any heat so even those who don't like spicy foods were able to try them. The only downfall was the time it takes to prepare them - well over 2 hours.

Banana Crumb Muffins

I made these this morning for my family and they were a hit. Nice and moist and the topping adds a little something extra. I did use oil instead of butter and a few nuts and some cinnamon to the batter. I think I will use apple sauce next time instead of oil. Definatley a keeper!

Sweet Potato Casserole II

If you like sweet potatoes you have to try this recipe. Make sure the potatoes are fully cooked so the texture is smooth. My brother does not like sweet potatoes and said he enjoyed this recipe. I forgot to add the vanilla but it turned out great. Would be nice if calories could be cut without compromising the flavors.

Vinegar Pecan Pie

I followed this recipe exactly as written. When we cut into the pie it was as dry as a bone. The pecans just crumbled apart. There was no filling whatsoever. It was a mess. I had read the reviews and was concerned that it would be runny - HA.

Beer Lime Grilled Chicken

Nice and juicy but I thought it would have a bit more flavor. Will use this recipe again but will add more seasoning next time and much more lime juice - I think that the beer totally voided out the lime and cilantro.

Amazing Sun-Dried Tomato Cream Sauce

Not bad. I had to jazz it up a bit though. I sauteed mushrooms, added extra sun dried tomatoes ( not oil packed - to use the dried ones you need to soak them in boiling water for a few minutes then drain). a bit of garlic powder and onion salt. I also added some leftover grilled chicken. Without all of the add ins the sauce would have been bland.

Very Special Spaghetti Sauce

I would give this recipe a -10 if I could. I followed the recipe except I drained the fat before I added the flour. I bought my favorite bottle of dry red wine. I could not even doctor it up so that I could keep it. I have made lots of homade spagetti sauces and this was by far the worst. Maybe leaving out the wine would have helped - not sure..

Pizza Dough I

Not bad but not the best I've ever made. I added some extra seasoning - pepper, garlic powder, italian seasoning. My problem was that the dough was a little too soft and after it sat for 15 minutes it was even softer. Not quite soggy though. If I had baked it any longer the toppings and cheese would have burned. But I had to give it 3 stars for ease of preparation and the overall taste was decent.

Cool Whipped Frosting

I always frosted my jello poke cakes with just plain cool whip. When I saw this recipe I thought I would give it a try. It added a nice flavor to the frosting and it thickened it up a bit. I took it to a outdoor party and the frosting held up to the heat well. I used the instant cheescake pudding because that was all I had. I am wondering if anyone has tried to use the chocolate pudding and frosted a chocolate cake with it.
