Cream Cheese Filled Pumpkin Muffins

These were good - I followed the recipe except for using pecans instead of sunflower seeds. I also replaced 1/2 of the oil with applesauce. These came out moist - my kids liked them but they were not overly excited about the cream cheese - I think I would have liked it better had I added a little sugar to the cream cheese.

Fabulous Wet Burritos

These were good - not quite fabulous. I followed the recipe except I did not add the whole can of refried beans and was glad that I didn't. I also baked these in the oven instead of in the microwave - but I think the result would have been the same. They were just missing something - not sure what.

This recipe was good but it was missing something. I ended up making a sauce with yogurt and lots of seasonings that I had from another fish taco recipe and that helped -

Fresh Tomato Shrimp Pasta

Easy to prepare - but was missing something. My husband and I tried several different things. Siracha, parmesean, more salt and pepper and it was still lacking. It needed more spinach too. I wanted to like it..

Carrot Cake III

Great recipe. The only changes I made was to replace half of the oil with applesauce, reduced sugar to 1 1/2 cups and added an extra cup of carrots. The cake turned out very moist with lots of flavor. I used this frosting recipe too and only used 2 cups of powdered sugar - it was plenty sweet. I also topped the cake with toasted pecans.

The filling is very sweet but sooo good. I was wanting to make cupcakes so I only made half the amount of filling. I still had quite a bit left over and it is too sweet to frost the whole cupcake with. So I added the remainder of whipped topping to the left over filling and piped that on the cupcakes - perfect. I also used chocolate cake and chocolate pudding mix.

Cowboy Cookies III

If you are having a problem with the cookies flattening too much it is because there is not enough flour or oatmeal. After reading the reviews I added an additional 1/4 cup flour and about 3/4 cup oatmeal. I had no problems with the cookies being too flat. I also made half of the recipe with raisins instead of chocolate chips - just added about 1 tsp of cinnamon in the batter.

Chicken and Dumplings III

This recipe was ok but salty. I used reduced sodium chicken broth and healthy request cream of chicken soup (lower salt). I did not add any other type of salt. The dumplings came out great and the chicken was tender. I used chicken tenders instead of the whole breast because that was all I had.

Hot Buttered Rum Batter - Modified 12-27-09

Mmmmm - My uncle makes Tom and Jerry drinks every Christmas eve - this tastes almost identical. I did not use a full cup of butter (maybe 3/4 cup) - next batch I will try making it with 1/2 the butter.

Pecan Cream Cheese Squares

Seriously - I wanted to like this recipe. I put a generous 2 cups of pecans in and it did not have much of a pecan flavor. Baked it in a 9x13 pan and the cream cheese portion of it was a thin, almost nonexistent layer - nothing gooey about it. I think it would have been much better if the crust was half as thick and the cream cheese part much thicker. The only variations I made from the original recipe was adding a little vanilla in the cream cheese mixture and not adding quite as much confectioners sugar - it was still plenty sweet.

Mile-High Peanut Butter-Brownie Pie

I don't think I will be making this very often - because I could have ate the whole darn pie myself! Oh my! This one is a keeper. Followed the recipe exactly. It came out perfect and was firm enought to cut into small pieces which was necessary because it is very rich. I read the other reviews and wished I had used chopped up peanut butter cups too. If cutting the pie when it is cold it is hard to cut - let it sit out for a bit and it makes cutting much easier.
