Cowboy Cookies III

If you are having a problem with the cookies flattening too much it is because there is not enough flour or oatmeal. After reading the reviews I added an additional 1/4 cup flour and about 3/4 cup oatmeal. I had no problems with the cookies being too flat. I also made half of the recipe with raisins instead of chocolate chips - just added about 1 tsp of cinnamon in the batter.

Chicken and Dumplings III

This recipe was ok but salty. I used reduced sodium chicken broth and healthy request cream of chicken soup (lower salt). I did not add any other type of salt. The dumplings came out great and the chicken was tender. I used chicken tenders instead of the whole breast because that was all I had.

Surprisingly simple and good. I made some with BBQ sauce and some plain because I have 2 kids that don't like BBQ. The name does fit the product though - quite ugly.

Hot Buttered Rum Batter - Modified 12-27-09

Mmmmm - My uncle makes Tom and Jerry drinks every Christmas eve - this tastes almost identical. I did not use a full cup of butter (maybe 3/4 cup) - next batch I will try making it with 1/2 the butter.

Pecan Cream Cheese Squares

Seriously - I wanted to like this recipe. I put a generous 2 cups of pecans in and it did not have much of a pecan flavor. Baked it in a 9x13 pan and the cream cheese portion of it was a thin, almost nonexistent layer - nothing gooey about it. I think it would have been much better if the crust was half as thick and the cream cheese part much thicker. The only variations I made from the original recipe was adding a little vanilla in the cream cheese mixture and not adding quite as much confectioners sugar - it was still plenty sweet.

Mile-High Peanut Butter-Brownie Pie

I don't think I will be making this very often - because I could have ate the whole darn pie myself! Oh my! This one is a keeper. Followed the recipe exactly. It came out perfect and was firm enought to cut into small pieces which was necessary because it is very rich. I read the other reviews and wished I had used chopped up peanut butter cups too. If cutting the pie when it is cold it is hard to cut - let it sit out for a bit and it makes cutting much easier.

Tuscan Soup

The recipe as written is pretty blah - I followed it as written except added some carrots and canelli beans. The broth was a milky watery film. (I think another reviewer was right - it had an identity crisis) So I took some flour and butter and added the rest of the can of evaporated milk + some 2% milk and made a thick gravy and added it to the soup - then it was 4.5 star worthy - not thick but not watery. Served it with a crusty loaf of chiabatta bread. Thanks for the start of a great soup.

WAY TOO SWEET! I even made it with mayo instead of meracle whip and did not use quite a 1/2 cup of sugar. There is no way this tastes even similar to KFC.

Cheeseburger Soup III

This recipe was pretty good. My husband liked it more than I did. I pretty much followed the recipe except I used beef broth instead of the water and bouillon cube. I may have also added a little more cayenne pepper. I used about 1 1/2 cups of velveta and about a cup or so of sharp cheddar cheese.

Fish Tacos

I would give this recipe a 4.5 - it was good but missing something - could not figure out what. The beer batter for the fish was good - I did add a little extra salt though. The white sauce was very good - I used fat free yogurt and light mayo. I did not have cayenne pepper so I used chili powder instead. I also added a bit of kosher salt to the white sauce. I made 1/2 cod and 1/2 talapia - everyone liked the talapia better. I lightly fried the corn tortillas - sprinkled a little table salt on them as well. Definatley a recipe to make again - we topped them with pico de gallo. I think next time I may just bake the fish and try it that way to decrease the calories and fat.

Too Much Chocolate Cake

OH MY!!! This cake is spectacular. However, I did not follow the recipe exactly. I used 1/2 cup applesauce and 1/2 cup oil - in place of a full cup of oil. I also used 1/2 cup of strong brewed coffee in place of the water. Nice and moist - No need for frosting! I am glad I checked the cake after 45 minutes - it was done and an extra 10 minutes would have seriously over cooked it.

Baked Havarti Chicken

This recipe was pretty good. However, I did not follow the recipe exactly. I only had chicken tenders - marinated them in italian dressing then grilled them. When I made the mushroom sauce I added onions - tripled the sauce (but only added 1 TBS of worchestershire. Used fresh garlic rather than the garlic salt. When I finished grilling the chicken I put them in the skillet and added the chili peppers and cheese then covered it for a minute. Served with wild rice and broccoli. It was a nice and quick recipe - a little on the salty side though.

Sesame Pasta Chicken Salad

Not a dish I would make again. I used the mini bow tie pasta - a little easier to eat Added snow peas and matchstick carrots - glad I did. I used 1/3 cup of oil and it still was kind of oily - even after sitting overnight. I followed a few reviewers tips and added half of the dressing the night before then the rest a few hours before serving. My biggest complaint with the recipe is that it wasn't very flavorful. I considered making more dressing minus the oil but I was worried about over doing it. I also followed some reviewers suggestion of marinating the chicken in the same dressing and the chicken was actually very good - so I was so dissapointed that this didn't turn out.

Insalata Caprese I

These were awesome. Fresh GARDEN tomatoes are a must - the store variety don't cut it. I sliced my tomatoes in thick slices then seasoned them with salt and pepper, topped with a slice of fresh mozzarella and onion then drizzled olive oil and balsamic vinegar glaze (a little thicker than regular balsamic). Topped with fresh basil thinly sliced into ribbons. Everyone loved them and it was a quick and easy summer appetizer.

Marzetti® Italian Penne Pasta Salad

Does anyone know where you can get Marzetti dressing? I went to 4 grocery stores and no one even carried the brand. So I made the recipe with Briannas home style asiago cesar dressing. Used black olives instead of kalamata olives. Used dehydrated tomatoes I processed last year instead of the ones packed in oil. And added probably 1/4 cup of the dried tomatoes. Overall the flavor was good. I grilled my chicken and served it separate from the rest - I wasn't in the mood for cold chicken. Next time I will probably try a peppercorn dressing - but overall it was a success.
