Chicken With Mushrooms

Reviewed: Feb. 26, 2013
it was ok. Quick and easy. I added the cream of chicken soup mix to make it more like gravy.

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: Jan. 28, 2013
I told my family it was a coconut pie. The only one who wasn't fooled was my daughter and that was because she saw that the squash was missing from the countertop. I was surprised at how little it tasted like squash. Only gave it 4 stars because it was too sweet. Also I think I would have liked it better if it was more custardy. There were several reviews about the squash being too watery - For those of you who are boiling the squash to cook it - you can pierce the whole squash with a knife a few times then microwave it for about 7-10 minutes until you can push a knife easily through the outer shell. Then cut in half and scoop out the seeds. I did put the cooked squash in a dish and chopped it up some so there were no long strands.

7-Up® Biscuits

They were good fresh out of the oven but not that great the next day. Nice easy recipe though.

Megan's Granola

Reviewed: Jul. 19, 2012
Great recipe. I did what many did and modified it to fit me. Didn't use the oat bran - just added extra oatmeal. I think I ended up using 7 cups of old fashioned oats and 2 1/2 cups of quick cook oats. The only nuts I added was slivered almonds. Instead of all the oil I did 1/4 c oil 2/3cup unsweetened apple sauce and a little water. Baked it at 270 for a while. I baked mine for quite a while - not sure if it was because I substituted the oil but it comes out quite crunchy and flavorful without all the oil. Just remember to set your timer and stir occasionally- the first batch I got a little too toasty and it totally dried out the rasins and turned them into little crunchy bites of nastiness.

Peanut Butter Haystacks

I remember them being better when I was a kid. Maybe they weren't made with butterscotch chips.

Fry Bread Tacos II

Reviewed: Jun. 21, 2012
Nice recipe. The only change I made was to put a little olive oil in the dough. I think next time I will add some seasonings to the fry bread. Maybe some cumin - then instead of topping with ground beef mixture use shredded beef instead. I think you could do a lot of variation with this recipe. Just don't fry the dough in shortening - I didn't have enough oil so I did half oil and half shortening and the end result was good but it left a coating of shortening on the tongue.

Lana's Sweet and Sour Meatballs

Reviewed: Jun. 16, 2012
Good recipe if you like the sweet and sour flavors. I had a few in our family that didn't like the meatballs but that was a picky kid problem. The only variation I made to the original recipe was to add more vegetables.

Beef and Bean Chimichangas

Reviewed: Apr. 4, 2012
A good way to use up some ground beef. My only problem with it was that it was a little salty. I think next time I will do garlic powder instead of the salt. Topped with a little sour cream and black olives.

Cranberry and Cilantro Quinoa Salad

Reviewed: Mar. 30, 2012
I used chicken broth to cook the uinoa instead of water. The only other alteration I made was to add a little cyanne pepper. Nice flavors, next time I will remember to start with half of a lime then taste before adding more. My lime was pretty big and it ended up having more lime flavor than I wanted.

Quinoa and Black Beans

Awesome recipe. The only thing I did differently is cook the quinoa in a rice cooker with the spices and veg. broth. Sauteed the onions and garlic then mixed it all together.

Southern Praline Pecan Cake

Nothing spectacular and not worth making again - very sweet. I pretty much followed the recipe except for the pecans. It crumbled apart when I went to take it out of the bundt pan.

Nacho Chili

Reviewed: Jan. 20, 2012
I liked the recipe a lot - my husband likes regular chili better. I did not make this recipe in the oven. I browned the beef and onion then drained and added the rest of the ingredients and simmered on the stove (also omitted the celery). The chedar soup was totally not needed. It would have been just as good with some shredded cheddar cheese.

Panuchos

Reviewed: Jan. 3, 2012
I have made these a few times. I have used shredded chicken and also recently tried shredded deer roast and it was equally good. I sliced avacado and squeezed lime juice over the avacado. I also usually top with cilantro. This recipe is an easy one to try out on company.

Bean 'N' Beef Crescent Pie

Reviewed: Dec. 20, 2011
I almost gave this a 3 star rating. It was ok but needed some help. We followed the original recipe and I think it could have used some more meat and less taco seasoning. It could have benefited from some chopped tomato and lettuce on top too. It wasn't a bad start to a decent recipe though.

Manicotti Alla Romana

Reviewed: Dec. 11, 2011
This recipe would have been 5 stars had it called for sausage instead of hamburger. I saw the reviews and wished I had not ignored them - sausage would have been perfect. I did not use 2 TBS of the chicken bullion - only used one TBS and was glad I did or it would have been extremely salty. Great recipe though. The white sauce added a lot of flavor to the dish.

Perfect Sesame Chicken

Reviewed: Oct. 6, 2011
This was a great recipe. I did not have any sherry so I substituted it with water. I also used siracha instead of chile paste. After cooking the chicken I threw it in a bowl and spooned the sauce over the chicken and tossed. Kids loved it.
