Brownie Caramel Cheesecake

made as directed. The only suggestion I would make is to not spread the caramel all the way to the edges of the brownie before dumping the cheesecake mixture on it - maybe even making a moat. I found that the outside edges were quite hard and chewy due to the caramel baking to the sides of the pan. Most certainly did not see the caramel layer once cut but it was still a winner

Zucchini Boats on the Grill

My husband and I enjoyed this recipe. I did not add the jalapenos because I wanted my kids to eat it - they weren't impressed. I did not boil the zucchini - I shallowly hollowed out the zucchini and sprinkled salt then rubbed the outside with olive oil. I did not add much of the zucchini pulp to the filling and I had no problem with it being too wet. The bread I used I left out for a few hours so it was dry. Overall it was a nice side dish and it would be easy to modify the fillings.

Sea Salt Sweet Potatoes

This was a pretty good side dish - I wish I would have had maple syrup - used some syrup that no one liked on pancakes because it wasn't sweet enough - it was perfect for the potatoes. Forgot the nuts...

Addictive Sweet Potato Burritos

I loved these but my husband was not a fan. I made a mistake in blending the sweet potatoes and also blending the kidney beans - so the end result was too smooth. I did not add all the water - and slow cooked the beans for quite a while until it was the consistency of re-fried beans. I froze the remainder of the burritos and took one out for a quick lunch. Very good.

Tacos in Pasta Shells

My family enjoyed this recipe. I put 1/4 of the shells in a separate pan and cooked them without the taco sauce because a few of the kids don't like sauce. I did not toss the shells in butter and used more seasoning than called for. I also ended up using more cream cheese,

Breakfast Casserole II

This recipe was ok - the end result was kind of oily though. It was also kind of wet. I didn't add the whole amount of potatoes - maybe that is why. Overall not bad but could have had some additions to improve flavor and texture.

Restaurant-Style Buffalo Chicken Wings

very good as written. Wishing I would have put a little more seasoning in the flour mixture. I think next time I will do 2 parts hot sauce to 1 part butter. Not quite hot enough. Used Franks hot sauce. I may try baking it next time too.

Spicy Black Bean Cakes

I liked this recipe. The taste was good. My kids thought that the sweet potatoes was cheese - so I didn't correct them. My only complaint was that they were kind of dry. Without the sour cream they would have been too dry. I did flatten them pretty thinly but I am wondering if cooking them in a no stick pan would work better. Also - don't make them too far in advance.

I wanted to like it. Wasn't bad but not awesome either. I followed the recipe. People, please don't rate a recipe awesome or horrible if you change almost everything about it. Going through the reviews to see if I wanted to make it or not was frustrating. I often tweak a recipe to suit my familys tastes, but if you change everything about the recipe except you baked it - then reviewing it is kind of silly...If that is the case - just save the recipe with your changes. But don't review it

Mock Coconut Pie (Spaghetti Squash Pie)

I told my family it was a coconut pie. The only one who wasn't fooled was my daughter and that was because she saw that the squash was missing from the countertop. I was surprised at how little it tasted like squash. Only gave it 4 stars because it was too sweet. Also I think I would have liked it better if it was more custardy.There were several reviews about the squash being too watery - For those of you who are boiling the squash to cook it - you can pierce the whole squash with a knife a few times then microwave it for about 7-10 minutes until you can push a knife easily through the outer shell. Then cut in half and scoop out the seeds. I did put the cooked squash in a dish and chopped it up some so there were no long strands.

Megan's Granola

Great recipe. I did what many did and modified it to fit me. Didn't use the oat bran - just added extra oatmeal. I think I ended up using 7 cups of old fashioned oats and 2 1/2 cups of quick cook oats. The only nuts I added was slivered almonds. Instead of all the oil I did 1/4 c oil 2/3cup unsweetened apple sauce and a little water. Baked it at 270 for a while. I baked mine for quite a while - not sure if it was because I substituted the oil but it comes out quite crunchy and flavorful without all the oil. Just remember to set your timer and stir occasionally- the first batch I got a little too toasty and it totally dried out the rasins and turned them into little crunchy bites of nastiness.

Fry Bread Tacos II

Nice recipe. The only change I made was to put a little olive oil in the dough. I think next time I will add some seasonings to the fry bread. Maybe some cumin - then instead of topping with ground beef mixture use shredded beef instead. I think you could do a lot of variation with this recipe. Just don't fry the dough in shortening - I didn't have enough oil so I did half oil and half shortening and the end result was good but it left a coating of shortening on the tongue.

Lana's Sweet and Sour Meatballs

Good recipe if you like the sweet and sour flavors. I had a few in our family that didn't like the meatballs but that was a picky kid problem. The only variation I made to the original recipe was to add more vegetables.
