About this Cook
Mother to 2 girls (13 & 4) that think I am the best cook in the world! Army wife to a husband that will eat anything EXCEPT lima beans & onions...good thing he still doesn't know what I mean when I say it has shallots in it!! We're currently stationed at Ft. Riley and I'm still missing my beloved Colorado (3 duty stations later). My family is a willing test subject for any new recipes I get the taste for - so everyone's happy.
My favorite things to cook
Anything really...I try to cook dinner every night, except when the man of the house is deployed, so I'm constantly looking for new things to try. We try to stay healthy, using ground turkey and other lean meats, lots of veggies, low fat/cal desserts. We love seafood and wild game. I have a soft spot for appetizers, and during football season we always have a good supply of "football snacks".
My favorite family cooking traditions
One of my favorite food traditions (although we didn't cook it lol) was having Danish Kringle from Racine, Wisconsin. It was the most wonderful pastry and we would have it every Christmas. I love to make Pecan Pie at Thanksgiving, oh and every time I see my dad, I'm required to make King Ranch Chicken.
My cooking triumphs
Whole Roasted Duck! My swordfish is pretty good too... Mastered a favorite dish from a chef in Atlanta - Seared Scallops over Creamed Brussel Sprouts - SO GOOD! Honestly though, I'm just pleased if people finish their plates.
My cooking tragedies
The 2 we NEVER speak of - Wasabi Mashed Potatoes & Forbidden Black Rice

Easiest Turkey Loaf
We really liked this. I always use ground turkey for my meatloaf, but this was a nice variation on the old standby. I only used a 6 oz bag of stuffing and 1.5 lbs of meat. Still used 2 eggs and seasoned with garlic salt, pepper and some italian seasoning. It really had plenty of flavor without a sauce on top but brown gravy might be good to try next time.

Southern Grits Casserole
I halved the recipe. Used turkey bacon instead of sausage (just what i had on hand), used 1 less egg than called for. Season generously. We loved it!!! I had more servings than I should have ;-) Soooo good!

Spicy Pretzels
Everyone loved this!!! Was asked for the recipe countless times. I used Canola Oil, garlic powder instead of garlic salt (VERY important substitution!). Absolutely delicious & addicting.
