Fresh Rhubarb Pie

What a yummy pie! I made a few changes: To the rhubarb I added 1 1/2 cups chopped up strawberries, 1/4 tsp cinnamon, 1 TBLS tapioca, and 1/2 tsp almond extract. It came out nice and firm and not too tart or too sweet. . .just perfect with some vanilla ice cream! I will for sure make this again.

Peanut Butter and Cream Brownies

I wasn't too impressed with this recipe. It sounds super good and that's why I tried it, but I think it needs less cream cheese in the topping and more peanut butter. It just wasn't the flavor I was looking for.

Curried Coconut Chicken

I've always thought Indian food was so hard to make but this was super easy to make and very good. The only thing I changed was the coconut milk, I used low-fat. I served it with naan bread which was a huge hit! My husband and kids (ages 4 and 2) really liked this. My kids had so much fun helping me make and roll the naan bread. I'll be making both again soon. On a side note my kitchen did smell like curry for over a week so be prepared for that.

Butterscotch Oatmeal

This was the best oatmeal I have ever had and so easy to make! My son said it tastes like pudding. The only thing I did differently was add less sugar and less butter. I used 1/4 cup sugar and 1 Tbls butter and it was plenty sweet and buttery. Thanks for such a great recipe I never would have thought to put an egg in oatmeal!

Zucchini Brownies

These were very good although they were more like a cake than a brownie. At first I thought I would have the same problem that a few other people were having with the batter being too dry but I waited about 3 min after adding the zucchini before pouring the batter in and it was perfect. I think next time I am going to try them as cupcakes with cream cheese frosting for my daughters birthday. I love that they are such a great dessert and also have something healthy for you. My kids and husband didn't even know!

Clone of a Cinnabon

These were so good and so easy to make. I will be making these again and again. I wasn't sure if 15 minutes would be enough to cook them all the way through and was a little afraid that they would be uncooked in the middle, but they were perfect. Stick with the 15 min. I'm glad I did.

Blue Cornmeal Pancakes

I was looking for a recipe that was close to IHOP's cornmeal pancakes and I found it! These were so good. I only changed the blue cornmeal to yellow cornmeal and they were great.

New Year's Champagne Punch

I have made this for every major get together or holiday and everyone just loves it! Make sure you tell those under 21 it has alcohol in it because it does look like a yummy soda/ice cream drink. I have also made it without the champagne and it is still really good.

Easy Morning Glory Muffins

These are my favorite muffins ever! I did make some changes. Instead of rasins I used pineapple tidbits and I used half a cup of oil and half a cup of apple sauce. Even with the changes they were still very moist and yummy.

Chicken and Spinach Alfredo Lasagna

This recipe was so so good! I used non-fat 1/2 and 1/2 for the heavy cream which did not take away from recipe at all. And I used cheddar cheese because that was all I had at the time. And I used cottage cheese instead of riccotta cheese. Even with the changes it turned out to be fantastic. I haven't made it with the original ingredients yet so it may be even better. It was nice to have such a great meal and know that it was about 1/2 the fat. I will be making this again and again.

Best Bread Machine Bread

This is the best bread ever! I used my bread machine to make the dough and then baked it for 30min although I think the next time I will leave it in a little longer because the middle was doughy. I added one Tbls of butter to the dough as suggested and it was great. I will be making this for many more years.

Baked Sesame Chicken

This recipe was so yummy and really easy. My whole family loved it! If you have a meat thermometer I would use it. The chicken was actually done 17 minuets earlier than the recipe called for, so it was nice and juicy.
