Basic Pasta

Thanks for this simple yet delicious recipe. The recipe amount was perfect for our family of three. I let the dough rest for 20 minutes as others suggested, and cut into thin strips after rolling out. I think I will invest in a pasta roller! Also, make sure to let the pasta dry for 15-20 minutes - hanging if you can. When you boil it, add a bit of oil to the water to prevent boiling over, as fresh pasta is more likely to do this. For spaghetti size pasta, boil for 5 minutes for al dente. I will make again!

Avocado Ranch Salad Dressing

This is a great dressing. I had to make a few substitutions, but the core of the recipe lends itself to variation. I didn't have buttermilk so I used a touch of coffee cream. I didn't have dill either, so I used 1.5 tbsp of dill pickle juice. This gave the dill flavour and added the zing the buttermilk would have brought. I also added a couple squeezes of lime juice. I put this on top of a wedge salad, and it was a nice alternative to blue cheese.

Country Pound Cake

This was my first attempt making pound cake, and I was so pleasantly surprised at the result. It's a fairly easy recipe to follow, and the texture of the cake is what I am looking for in a pound cake - dense, yet tender crumb, and lovely on its own. I used two springform pans with this recipe - a 7 and 8 inch, and baked them for an hour. I replaced the lemon extract with almond, but otherwise, followed as written. It is worth making, especially for decorative cakes.

Dash's Donair

Another person from Halifax here. :) After reading the great reviews , I thought I'd try this recipe to make donair burgers for a summer party. It did not disappoint! I took the recommendation to use the paddle on my stand mixer and beat the meat to get the texture right. The combination of spices is perfect to achieve the donair flavour. I formed the meat into slider burgers, and barbequed them until well done. (donair meat is always better with a crust) I also served them with chopped tomato and onion, the sauce (I cheated and bought sauce from the local donair shop) and slider buns/mini pitas. They were a hit at the party, with none left. I doubled this recipe to male about 30 sliders.

Peanut Butter Cream Pie

As described, this is a very easy pie to make. I used whipping cream (1 cup/250 ml) rather than frozen topping, and made my own graham crust. It was very light and creamy. It was also a hit with my peanut-butter addict 5 year old.

Jenny's Grilled Chicken Breasts

Excellent yet simple recipe. The lemon juice doesn't take over - it complements the grilled flavour nicely. I tried this with chopped rosemary and it was incredible. Truly, you could use any fresh herb. We sliced this over a spaghetti pomodoro - fab!

Crazy Cake

Crazy cake is crazy delicious. I have never had great success with most chocolate cake recipes, but this one was amazing. My friend said it was the best chocolate cake she ever ate - and she doesn't really like chocolate cake. It was wonderfully moist and kept its moisture for days. It was such a hit I had to blog about it. I made mine in a silicone bundt pan, so it took about an hour to bake. Don't hesitate - make this cake.

Creamy Lemon Pie

This recipe needs no amending. It's so good I'm trying my best to not devour the rest of it. I like that it requires just a few, simple ingredients, and takes no time to put together.

Ginger Crab Cakes

These were fantastic. I didn't have mayonnaise, so I used 2 tbsp of tartar sauce (1/2 cup seemed way overboard). I also included breadcrumbs in the mix as I used canned crab, and found it too moist, even after draining. Make sure you have the heat med-high to ensure a nice crust. Will absolutely make again!

Baked Haddock

This is the best recipe to achieve a crunchy, flavourful baked fish. Definitely put the fish on a rack as another reviewer suggested, so that both sides are crisp. For my oven, 10 minutes on 500F was sufficient, so be sure to check on it. I will make this again!

Scallops with White Wine Sauce II

These were an absolute hit at my party. I'm giving it a four because I added romano cheese over the top with breadcrumbs, and the flavour of the cheese really combined well with the sauce. I also used this recipe over haddock, and it was delicious as well.

Carrot Cake III

I made this recipe exactly as written, and it turned out fabulous. Even those that responded with 'meh' at the suggestion of carrot cake loved it - and devoured the cake. I prefer to try and rate a recipe as given, not modify half the recipe and then give it a review. (I think another reviewer stated this as well.) Nonetheless, this is an impressive and delicious carrot cake - true to what it should taste like.

Tea Biscuits

I made these to go with my Mom's chicken soup, but added shredded cheddar just before adding the milk as another reviewer suggested. They were fabulous! At the end of the meal, there was only one left, and I think there may be a fight over who gets it. :) Thanks for a great recipe - I know I'll use this time and again.

Easy and Elegant Pork Tenderloin

A simple and excellent way to make pork tenderloin! I followed the recipe except scaled the breading/olive oil in half as my tenderloin was smaller. I did add my own seasonings to the breading, and followed the advice to line the pan with foil. I also tented the pork with foil until the last 5 minutes - this will keep the breading from getting burned. The pork was incredibly moist, and did not need any sauce (even though I made a gravy). A nice versatile recipe I will make again - thanks!

Butterscotch Bread Pudding

I made this for Christmas dinner, and it was a hit. It tastes great warm or cold, and is nice with whipped cream. I did add some cinnamon, but it would be just as great without. Will definitely make again.

Cinnamon Nut Coffee Cake

This is a great coffee cake - light and rich. The cake is fluffy, which was a nice surprise since this is a really simple recipe. I served it warm with some real whipped cream, and it was divine.
