Banana Blueberry Muffins

Evidently some people doesn't realize that muffin batter is THICK. It's suppose to be thick. You're not making cupcakes. I only made 3 changes in making these. I used 2 eggs and 1 cup of WW flour and 1 cup SR flour with 1 teaspoon of baking powder and left off the soda. I baked these in 2 batches. Thirst batch was not sweet enough for my liking, so I added 1/4 cup of sugar to the other batter and these turned out perfect. I'll definitely be making these again, with about 3/4 cup of sugar.

Easiest Peanut Butter Fudge

This was quick and easy. Not the type of Peanut Butter Fudge, I was looking for. This is okay for a quick fix. I used the 3 cups of powder sugar - still way too much.

Honey Wheat Bread I

Absolutely wonderful! I used 3 cups of whole wheat flour and 2 cups of bread flour and forgot to put the pan of water in the oven. A super soft bread. Perfect for sandwiches.

I made these last night and did not like them. They rose and were really popovery cute. Maybe popovers are an acquired taste. I don't know, they weren't for us.

Cake Balls

This was the easiest and most fun recipe to make. If you do not have the time to take your time on this, wait until you do. I made the cake and mixed the frosting in and refrigerated it over night. I did not use the entire container of frosting. I read where people talked about the balls not sticking together, you need to keep washing the frosting off your hands for it to stick together. Also, I used a chop stick inserted in the ball to dip. Don't forget to add a little shortening to thin out the chocolate, if not it will be too thick.

Fried Rice Restaurant Style

This was an easy recipe. I used frozen peas and carrots. Not sure what was missing, but something is. This is a good starting point on finding the perfect rice.

Very good. The only thing different was that I used apple juice and regular vinegar. If you like you sauce to be saucy double or even triple the sauce recipe.

Onion Casserole I

I have made this several times now. The only thing different I did, was I diced most of the onions up, put a layer of onion rings on top. If you don't have Ritz crackers, you can use regular saltines crushed with a little melted butter. You can't tell the difference when it is baked. Thanks for the recipe.

Okay... I added an egg and used buttermilk. Cornbread "anything" just isn't cornbread without those 2 ingredients. I also added a little sugar, since we like our's sweet. I remember eating these when I was a kid. We always put syrup on them. My husband and son loved them.

Hard Taco Shells

This is really neat. I tried making the shells using both flour and corn tortillas. In my honest opinion... GO WITH THE FLOUR. I cooked mine on my cast iron griddle with just a dribble of oil and they turned out wonderful. Thanks!
