Pecan Pie V

THE BEST pecan pie I have ever had!! The texture is perfect and it looked nothing like the picture here- it looked like regular pecan pie. Mine was done about 10 min sooner than called for and I did add a few more nuts too. I made it for Thanksgiving and now Im making another one just for us!! This could be dangerous!!

Amy's Cilantro Cream Sauce

This is such a great change to dress up any mexican dish. I made it as a dip for veggies for a football party and it was super. Now I cant wait to try it on burritos. Very unique flavor.

Chicken Enchilada Dip

What a hit!! We all loved it. I did not use mayo but sour cream instead. And I used velveta in place of cheddar because it melts so much better and not oily. I did not use the jalapeno but it was so great without it. My new favorite to take to get togethers!!

Chili I

Took it to a potluck and it was a hit!! People were asking if it was a secret recipe. Chili is our friends favorite food and he declared this absolutely fabulous!! We made it in the crock pot and there was not room for the whole bottle of beer so we only used half, but that was all we changed and it was great. It is not a thick chili but has more liquid than most, which I like.

Green Bean and Potato Salad

A nice combination and I really liked the dressing. I was just a little hesitant to use to much as I didnt want it to be overpowering so I didnt use it all but I wish I had. The potatoes absorbe alot of it but not to where its to much. I also added extra garlic as I love that with beans and potatoes.

Big Soft Ginger Cookies

These are absolutely fabulous!! I could not stop eating them and my husband, who does NOT like this type of cookie thought they were great!! They melt in your mouth and they stay soft at least until the next day, as that is all the longer they lasted at our house!! A super keeper!!

Apple Crisp II

This is the ultimate crisp recipe!! I have made it for years and everyone loves it. Melting the butter is not necessary. I use a pastry blender to mix it all to large crumbs and that creates a crunchier topping. Its hard to stop eating it!!

Dutch Potatoes

This is such a great twist on mashed potatoes!! I have given several friends the recipe and they all love it. I do add 2 cloves of garlic to the onion and it makes a great addition!!

Mexican Cornbread II

Tastes great but next time I will drain a little of the juice in the cream corn as it is really heavy and soggy when baked. Great alternative to regular cornbread.

No Bake Chocolate Oat Bars

They definately taste best cold when the chocolate is firm but everyone said they liked them even at room temp. I misread and thought it said use a 9x13 pan, so I was so surprised when I was almost done and noticed it said 9x9 because I had more than enough of the oat mixture to cover the bigger pan I just had to double my chocolate and peanut butter. I only used 1/2 cup plus 2 tbl butter and it was plenty. Very fun combo and super simple.

Mississippi Mud Pie I

Super easy and I love that it makes a 9x13 size. I was told by one that it reminded them of a fine pie they had on a cruise ship once- how great is that!!The cream cheese layer is pretty thin and I think that next time I may double that as its my favorite part.

Brownie Biscotti

375 is to high temp for these. 350 would be much more accurate and reduce to 300 after slicing them. I burnt my first batch at 375. I used toasted hazelnuts , which tasted excellent, and no egg wash. Great flavor, if not burnt :)

Roasted Potatoes with Greens

To make sure these got done I boiled them for 8 minutes first then put them in the oven for about 20 minutes at 350. It worked perfectly. I used 4 cloves of fresh garlic and some paprika also. It looked so pretty when the spinach was added. I did not drizzle with olive oil and did not even see a need for it. Sprinkled with parmasan cheese and they were so tasty!!!
