Raspberry Balsamic Dressing

I like that it takes such few ingredients. I tripled the preserves and used half balsamic half white wine vinegar. Beautiful plum color and great taste.

Asian Lettuce Wraps

We loved these. So quick and fun. I used ground turkey and fresh grated ginger. I also added 1 extra tsp of sesame oil because I wanted a little more of that taste. I will be making these often!!

Sweet, Sticky and Spicy Chicken

Was great--- just a might to hot for our taste. Would cut the hot sauce in half next time. Other then that it was good and it definitely got sticky for me. I dredged the chicken in flour first. That must be the trick.

Peach Cobbler Dump Cake I

Absolutely loved it- took to a ladies function and everyone wanted to recipe. I did use 2 29 oz cans of peaches for a 9x13 pan, draining all the juice from one can and a little from the second can as it seemed like alot, and it turned out perfect. I find that melting the butter and stiring the cake mix into it works fabulous as all the batter has butter. Turns out beautiful. Cant wait to make it agian!!

Hot Artichoke and Spinach Dip II

Very good but does not make a very large quantity as is. I wanted enough for an oval baking dish so I did double everything and used 1 box of frozen spinach. Served with toasted baguette slices and the dish came home empty. Great party food.

Quick and Easy Green Chile Chicken Enchilada Casserole

Loved how great they tasted and how easy they were. I used a rotisserie chicken and layered it all instead of rolling them individually. Tossed some taco seasoning in with the chicken and added some black beans. Wonderful.

Tilapia Soft Tacos with Chipotle Cream

All I could taste on the fish for the most part was the cinnamon and I even cut it in half as others had suggested. So glad I did but it was still to much and overall blah to me. The cream sauce was all heat with no flavor. I did not take the seeds out of the chiles- I guess I thought since they were canned they wouldn not be as potent but they were!!! So over all it was blah fish with to hot of sauce for us.

Chewy Peanut Butter Chocolate Chip Cookies

These are THE perfect cookie--and addictive is the key word. I never get cookies to stay chewy and fresh for a couple of days after they are made but these do!! People are asking for them- I think I could sell them. Changed nothing except used half peanut butter chips and half chocolate chips. Absolutely wonderful!!!!!

Cheesy Spinach Casserole

I loved the flavor combinations in this. I did double the milk sour cream mixture as I could tell it was going to be to dry and it needed even more that that. The noodles really absorbed it. I used rottini noodles instead of spaghetti.

Carrot-Ginger Cupcakes with Spiced Cream Cheese

I really liked the flavor and how moist these were. I was scared by the amount of ginger it called for but it was not overpowering at all. I did have to add 3 tbl of sugar to the frosting though as it was just not sweet enough for me.

Parmesan Spinach Balls

So so good!! I made these as an appetizer for company and was asked why I did not make more! Used seasoned stuffing instead of bread crumbs and dipped them in marinara sauce. Cant wait to make again! They are fast to make too which is a huge plus for me.

Italian Salad Dressing

Love this dressing. The fresh garlic is the key ingredient- do it a little in advance so the flavor of the garlic can really merry in. I prefer it with balsamic vinegar. Its good enough to use as a bread dip. So great.
