Pan-Fried Asparagus

Snaps for Kim! We loved this recipe. Asparagus can be bitter if not prepared properly which could be why so many don't like it. This was so simple and the flavor was terrific. I didn't add the garlic until the last few minutes so it didn't burn and I used 2 Tbls. of butter with 1 Tbls. olive oil for 1 lb. of asparagus. When the color starts to just fade its done. Great recipe.

Garden Casserole

Snaps for Phyllis! This turned out wonderful. I'm always looking for a way to cook eggplant that isn't deep fried or bitter. This is it. I even varied it a bit because I didn't have all the ingredients. Can tomatoes worked just fine as did dried herbs and no celery. Great recipe for my whole family!

Baklava

Snaps for Donna! This recipe is amazing. I never thought I could make this because its so complicated. I read so many reviews so I would make it right. The key is to have everything ready. Make the sauce first so it can cool, have the nuts chopped and have the butter melted. The phyllo I bought comes in a 2 pack each 9x13 so I didn't have to cut anything and its in plastic wrap so it stayed moist on its own. Take the time to coat each layer with butter. It's so worth the work. My kids never had it before and absolutely loved it! Thanks for a great recipe. A definite keeper!!!

Honey Mustard Grilled Chicken

Snaps for Connie! This is the best honey mustard sauce we've ever had. I followed the advice of others and doubled the sauce. So glad I did. I marinated the chicken in the sauce for several hours and still had some for basting. The chicken was juicy and the sauce was the perfect blend of flavors. Our new favorite!!!

Focaccia Bread

Snaps for Terri! This was my first attempt at Focaccia bread & it was quite successful. Having read many reviews I was able to put together a recipe that everyone enjoyed. After the dough was on the baking sheet I let it rise another 30 minutes. After that I made wells with my finger in the dough & added crushed garlic to the oil before brushing it on. Sprinkle with parmesan & mozzarella for a bread that rivals any bakery!

Apricot Barbecued Chicken

Snaps for Linda! This was sooooo good. I doubled the sauce and used whole boneless chicken breasts. I sauteed them in olive oil and garlic until they were mostly cooked, about 15-20 min. Then I baked them at 375 for 40 min. and they were delicious!!!

Snaps for Star! This is the perfect summer dish. I picked the basil and tomatoes out of the garden. I, too reduced the oil by half and it was wonderful. This would also be great as bruschetta on a crusty bread. Very versatile, very good!!!

Barley Bake

Snaps for Kat! What a great way to cook barley. I did alter it a bit, I used chicken broth and almonds and red onion. I also used a 1/2 bag of broccoli slaw mix from the produce section and only 3 Tbls. of butter. Even my very picky 15 yr. daughter loved it and that makes it even better!!!

Blueberry Coffee Cake I

This is a good recipe. I read many reviews to get ideas how to make it better which is why I luv this site. I used 2 cups of flour, 3/4 cup milk, 2 eggs and 2 cups of blueberries. I poured 1/2 the batter in a 9" springform added 1/2 the topping and 1/2 cup blueberries. Poured the rest of the batter and topped with streusel. I folded 1 1/2 cups of blueberries in the batter as well. Baked for about 50-55 min. at 350. It looked very pretty when sliced. Thanks to all the input from others. Its a keeper.

Molten Chocolate Cakes With Sugar-Coated Raspberries

Snaps for Pam! This could be the best chocolate dessert I ever had. I made them in regular size tins because I thought the large ones would be too big. Silly me, so instead I ate two topped with vanilla ice cream. I would so make this again and again and again!!

Perfect Berry Shortcakes

Snaps for Pam! This is really a 6 star recipe. Everyone in my family loved it. I followed the recipe except I rolled it into a ball then flattened it. The berry mix was strawberries, blackberries and raspberries. Very easy to make and even better to eat.

Magic Cookie Bars from EAGLE BRAND®

Snaps for Eagle Brand! I don't think you can mess up this recipe, really. After the graham crackers are in the pan you can put the rest of the ingredients on in any order. I went with nuts, sweet milk, 3 kinds of chips, coconut and then sprinkled a few more chips and a few more nuts on. Baked it for 22 min. I did put parchment spayed with pam in the pan 1st. I cut them into 48 1 inch squares so they were pop in your mouth size, any bigger would be overkill on the sugar. Thanks we really like these.

Santa Fe Style Chicken

Snaps for Dannon! I really like this recipe. I actually marinated it for a day and a half because we went out to eat the night I was suppose to grill it. It was so juicy and flavorful through the whole piece of chicken. I would so make this again, I liked all the ingredients and the final product, Thanks.

Eggplant Parmesan II

Snaps for Dolores! This is a good alternative to frying. My family truly enjoyed it. I baked it 10 min per side and then with sauce and cheese. Eggplant can be bitter and needs a lot of flavor (aka fats) to make it taste good. I wouldn't use egg whites or fat free cheese it just doesn't work well. If you normally fry it this is worth the work to avoid massive amounts of oil and it does taste very good.

Granny Kat's Pumpkin Roll

Snaps for Angela! This was wonderful. I thought it would be hard to do and it wasn't. I added cinnamon and fresh ground nutmeg to the batter. After I frosted it I added 3/4 of a cup of finely chopped walnuts. I made sure it was totally cool before frosting it and nothing leaked out. I used parchment paper to line the pan, I think it made it easier to flip. It looks so pretty when sliced, a definite keeper!!!

Apple Stuffed Chicken Breast

Snaps for Behr! This was a wonderful dinner. I only made one small change because I didn't have wine. Based on other reviews I used a can of chicken stock instead of wine and water and it was great. Everyone loved the apple cheese combo. Do season the chicken before you brown it, it helps flavor the gravy as well. A definite keeper!!

Blackberry BBQ Sauce

Snaps for Ina! This is the best sauce ever, so much better than anything out of a bottle. I used regular mustard because thats what I had and it was amazing. I used it on grilled chicken and everyone loved the fruity flavor. Thanks for a great recipe!!!

Mushroom Pork Chops

Snaps for Melissa! Great recipe. I read the other reviews & made some changes. I whisked together 2 cans of soup 1 can of milk & 1/2 can french onion soup and added that to the pork omitting the fresh onions & mushrooms for a smoother gravy. Can't wait to try it with chicken.
