Beer Batter

VERY simple and quick batter that is so versatile. I was drawn to this recipe because of the few ingredients required. It crisps up nicely & has a light texture to it. I tried it with potatoes, zucchini, onions, and jalepeno peppers (w/ cream cheese) and everything turned out great!

Pineapple-Onion Pork Chops

I enjoyed the unique flavors that the chops had, but it was a tad sweet for my liking. This dish was better the second day - more flavorful and juicier. I had made twice as many chops, which turned out to be good, so that I could have tried them at their best. (the second time around.) I also added a little flour to the sauce, to thicken it, as it was a little too thin for my liking.

These were very easy to make, which is a plus for this recipe. I modified this a little, using taco seasoning instead of bbq sauce (since that's what I had in the house). My family loved them - I think they would be a great 'make ahead' meal, as the leftovers are splendid.

Double Frosted Brownies

These enhanced brownies were very easy to make, but look and taste like a trickier-to-make dessert. One thing that I did differently, out of necessity, was use vanilla yogurt instead of milk to get the middle layer to a speading consistency. (no milk in the house) I would assume it turned out just as delicious as the original would have.

Fancy Potatoes

When Janet Jones described these as rich, she was right! They were delicious, but you can't eat very much at a time, which I guess is good. Next time I may use less cream cheese.

Party Cookies

I loved the color of these cookies. (I used strawberry jello.) They had kind of a bland taste, so I tried rolling some of them in sugar and that seemed to help a little bit. I used a contrasting colored sugar, like blue, which made them very vivid.

Buffalo Chicken Dip

This dip was easy and tasted great, whether it was hot or cold. Baking it seemed to fluff it up a bit, so it seemed a little creamier when baked. I made it with boiled chicken breast which I shredded before adding. It was great served with celery and tortilla chips.
