Cheese and Sausage Stuffed Zucchini

This meal was good, but I would've preferred it to be more 'saucy'. I found the stuffing to be slightly dry; however the flavor was very good. I agree that it doesn't need as much italian seasoning. I used what I thought was a large zucchini but had twice as much stuffing as I needed. I also felt that there was no need to microwave the zucchini before baking. If at all, I would only put it in for a minute. I microwaved mine for 3 minutes and it was too long, in my opinion.

Green Chili and Cheese Chicken

Holiday Chicken Salad

I made this for my husband since I don't care for mayo, and he LOVED it! I left out the green pepper since I didn't have any, and it was still good. I'll definitely make it again. Apparently this type of chicken salad is also called "Cape Cod chicken salad"

Chicken, Avocado and Mango Salad

I thought this salad was excellent! A great blend of the sweet mango and the slightly spicy dressing (but not too spicy, don't worry). I think I would add some sliced red pepper next time for some extra flavor and color.

The flavor was good, but I wasn't thrilled. AND, this made WAY more than my husband and I could eat in one week, so some of it ended up going bad.

Herb, Garlic and Bacon Pork Loin

I only needed to serve 4 people, so I used a 2.5 lb pork loin (which is actually sold as 2 separate pieces of meat). I laid them side by side and wrapped the bacon across both. I couldn't find fresh pearl onions, so I cut a yellow onion into wedges and also added some carrots as well. I used a meat therm. to cook to 160 which, which only took about 45 minutes. Then I used the broiler for another 10 minutes to crisp up the bacon. I think it was too long in the broiler because I found the meat to be a bit dry. I'd try 5 minutes next time. Since it was a little dry, I made a gravy from the pan drippings by adding some cornstarch mixed with water. It turned out great! And the 2.5 pork loin probably would've fed 6 people. I had plenty of leftovers. I'll definitely be making this again.

Layered Spinach Mostaccioli

I added about a 1/2 cup of ricotta, some oregano & garlic salt and mixed it in with the mozzarella and the spinach all together. I also used whole wheat fusilli and it definitely could use more pasta with this amount of sauce. But overall it was a great recipe. I'll definitely make this again.
