Amish Potato Salad

I've made this recipe several times now, and I like the sweet flavor of it, though sometimes I decrease the sugar a bit. I don't like celery so I substitute about a teaspoon of celery salt, and I use green onions. This doesn't replace my standard potato salad recipe, but its great for a change of pace.

Farmer's Casserole

I really enjoyed this recipe, and my husband even went back for seconds. Based on what I had on hand, I used 2% milk instead of evaporated and a blend of cheddar and mozzarella instead of pepperjack and used more cheese than the recipe calls for. I would really like to try it again with the pepperjack, though.

Easy Guacamole

This guacamole tasted great! I don't like the crunch of onion in my guacamole so I substituted some onion powder. I also used 1 Tb of lemon juice instead of lime since that's what I had on hand.

Bean 'N' Rice Burritos

My husband and I thought this recipe was great. I like to play around with spices, so I added some chili powder, cayenne pepper and lemon pepper. Together with a salad this made a quick and healthy dinner.

Amish Meatloaf

Wonderful recipe! The meatloaf was so flavorful. I didn't have Ritz type crackers so I used saltines, and I threw in a pinch of salt, pepper and garlic powder. Erring on the side of caution, I also cut the amount of glaze in half and that made the perfect amount for my husband and I.

Cinnamon Streusel Orange Muffins

These muffins were wonderful, very moist. I was disappointed at not really tasting any orange flavor, but if you weren't expecting it you wouldn't know anything was missing. Next time I'll either add some orange zest or leave out the orange altogether.

French Toast Casserole

I've made similar recipes and had trouble with them being soggy, but that was not the case with this one. I baked it for a full hour, and it was just perfect. I really like the cinnamon sugar on top, and I added some nutmeg as well. This will definitely be made again.

Carrot Cake III

I made this recipe as it was listed in my Better Homes & Gardens cookbook, which was exactly the same except it used 3/4 cup oil and 1/2 tsp baking soda. It was the best carrot cake I've ever had, very moist and not too dense. The cream cheese icing is very good too. I don't think it would have been nearly as good without the adjustments I made.

Italian Meatball Sandwich Casserole

I found this same recipe in a Taste of Home magazine a while back, only that one called for slicing the bread, not cubing it. I think cubing the bread would be better. Everything was great about the recipe except I didn't think there was any need for a cup of water, and I would probably cut back a bit on the mayo/cream cheese mixture next time. This is not a dish for those counting calories!

Lemon Blueberry Bread

This bread was very good. I used small wild blueberries so I had no problem with them sinking at all. Next time I'll wait longer before drizzling the glaze over top since it ended up melting down the sides of the bread into a puddle. Great flavor , though, I thought the amount of lemon was perfect. I did leave out the lemon zest and the nuts.

Colorful Fried Rice

This is a great recipe! So good and so easy to make. I used a little bit more soy sauce than called for, and I would saute the carrots before adding everything else since they were still crunchy at the end. Other than that, I wouldn't change a thing.

Vikki's Red Bean Sausage

Definitely worth 5 stars! I cut the recipe in half and made just a few changes. I used two teaspoons of Tony Chachere's Creole Seasoning in place of the spices listed and a can of Rotel tomatoes rather than using separate cans of tomatoes and chiles. I also stirred in approx. 2 cups of cooked brown rice. It smelled heavenly while simmering on the stove.

Spaghetti With Marinara Sauce

I wasn't too sure about this sauce at first, but after letting it sit for a day or too I thought it was wonderful. The flavor was just perfect, and I liked the capers, which I've never had before. I also added the red pepper flakes and thought they gave the sauce a nice kick. The only changes I made were I cut the recipe in half and used just one can of diced tomatoes and one can of tomato sauce.
