Bean 'N' Rice Burritos

Reviewed: Apr. 4, 2007
My husband and I thought this recipe was great. I like to play around with spices, so I added some chili powder, cayenne pepper and lemon pepper. Together with a salad this made a quick and healthy dinner.

Pasta Isabarte

Reviewed: Mar. 28, 2007
What a great pasta dish! I've never put boiled eggs in a pasta dish before but, based on the reviews, I added an extra egg even and loved it. Since my husband doesn't like olives, I made it half with olives and half with marinated artichoke hearts. I also baked it for a good 45-50 minutes. Wonderful!

Andrea's Pasta Fagioli

Reviewed: Mar. 23, 2007
This recipe was okay, but I'm not sure if I'd make it again. It smelled really good while simmering on the stove but left a bad aftertaste in my mouth after dinner, and I doubt the leftovers will get eaten.

Spicy Bagel Bites

Reviewed: Mar. 21, 2007
I really didn't care for this recipe at all. I sprayed some butter flavored cooking spray on the bagels since it seemed like there should be something there for the seasonings to stick to. When all was said and done, there just wasn't much flavor to them, and most of them ended up getting thrown out.

Pecan Sandies

Reviewed: Mar. 21, 2007
These cookies were okay, but I was disappointed because they seemed like just sugar cookies with pecans in them. I had to refrigerate the dough for a while since it was really sticky, and the cookies spread in the oven, looking nothing like the picture posted. I doubt I would bother making these again.

Amish Meatloaf

Reviewed: Mar. 20, 2007
Wonderful recipe! The meatloaf was so flavorful. I didn't have Ritz type crackers so I used saltines, and I threw in a pinch of salt, pepper and garlic powder. Erring on the side of caution, I also cut the amount of glaze in half and that made the perfect amount for my husband and I.

Oven Baked Jambalaya

Reviewed: Mar. 20, 2007
This was really good. I cooked the onion and bell pepper mixture in the skillet as directed then threw everything into the crockpot except for the rice. Just before serving, I cooked the rice in chicken broth then added it to the crockpot. The only downside is that it tasted quite salty, but I think maybe that was due to the sausage,I recently moved to Canada and had to buy a different brand than what I normally use. I didn't think this was too spicy, I even threw in some red pepper flakes. I also left out the shrimp.

Rainbow Pasta Salad

Reviewed: Mar. 19, 2007
I really enjoyed this recipe, though I had to make a few changes. I didn't have corn or artichokes, so I left those out, and I added some Parmesan cheese. I also used less dressing, I just eyeballed what amount looked good. This salad was very light and refreshing. I'd love to make it again with the artichokes.

Cinnamon Streusel Orange Muffins

Reviewed: Mar. 19, 2007
These muffins were wonderful, very moist. I was disappointed at not really tasting any orange flavor, but if you weren't expecting it you wouldn't know anything was missing. Next time I'll either add some orange zest or leave out the orange altogether.

Berry Cornmeal Muffins

Reviewed: Mar. 15, 2007
These muffins were okay, but I don't think I would make them again. I didn't have strawberries so I used raspberries instead. The muffins didn't seem sweet enough.

French Toast Casserole

Reviewed: Mar. 15, 2007
I've made similar recipes and had trouble with them being soggy, but that was not the case with this one. I baked it for a full hour, and it was just perfect. I really like the cinnamon sugar on top, and I added some nutmeg as well. This will definitely be made again.

Diane's Colcannon

I LOVE this dish, its become a staple in my recipe box. The only change I make is to mix in the butter instead of making a well for it. This is the ultimate comfort food.

Basic Ham and Bean Soup

Reviewed: Mar. 9, 2007
This was a nice easy soup to make and very flavorful. On the advice of other reviewers I used chicken broth instead of water, but I think I would prefer half water and half broth. I also didn't have a ham bone and thought it was still very good with just the chopped ham. I also didn't have any celery so I used celery salt and navy beans in place of the great northern. I thickened it with a little flour/water mixture. This reminded me of a soup my mom used to make except she used lima beans.

Cabbage Roll Casserole

Reviewed: Mar. 7, 2007
I cut the recipe in half and after 2 hours the rice was still not cooked and the cabbage was crunchy. Way too much time to have to spend on a simple casserole dish. I'm giving it 3 stars because aside from the crunchy rice and cabbage the flavor was decent. I definitely would not make this again without precooking the rice and cabbage. It also didn't look very appetizing. I put the leftovers in a saucepan with a little water the next day and let it simmer until everything was cooked thru finally.
