Robin's Sweet and Spicy Black Beans

I liked the concept of the sweet/spicy flavors, but this was just much too spicy for me, and I even cut back on the cayenne pepper. My husband liked it better, though it did make him break out into a sweat!

Country Scones

These scones are so good, flaky and tender, and the cinnamon sugar on top is the perfect finishing touch. This will be replacing my old recipe for scones.

Brunch Enchiladas

This recipe was pretty good, though I don't think it's something I'd want to make regularly. I added some red bell pepper to the filling and felt that it could have still used some more vegetables, maybe some broccoli or hash brown potatoes.

Chicken Noodle Soup

Perfect chicken noodle soup. I scaled the recipe down to just one serving so I just eyeballed the chicken and vegetables. I liked the herbs in it.

Dutch Potatoes

Savory Grilled Potatoes

I was intrigued because I've never seen a grilled potatoes recipe quite like this one. My husband really liked them. I wasn't the biggest fan of the mayonnaise taste , but that may have just been the mayonnaise I used. I can imagine it being real good with Hellman's.

Fresh Southern Peach Cobbler

This is a wonderful recipe for cobbler, better than my maw maw's, as much as I hate to admit it. Though the recipe calls for eight peaches, the four large peaches I had seemed just the right amount. I loved the topping, that's what really set it apart for me.

Spinach Chicken Manicotti

My husband and I both really liked this recipe. I did have to improvise since I didn't have manicotti shells, so I used lasagna noodles and basically made roll-ups. I wouldn't change a thing about this recipe, it was great.

Oregano Chicken

I really liked the flavor of this dish. I used leg/thigh portions so it had to bake for quite a bit longer than directed, but it was worth it. The sauce was great over mashed potatoes.

Vegetable Soup II

I'm giving this soup an average rating because, while it was alright, I've had better vegetable soups. I did substitute frozen vegetables for the canned ones called for.

A Plus Fair Corn Dogs

These corn dogs were great, I thought the batter was just right. I made them in the skillet so it was a bit tricky keeping the batter on, but I managed. I also rolled the hot dogs in flour before coating in the batter.

Hamburger Steak with Onions and Gravy

I made this for dinner last night and thought it was great. The burgers were perfectly seasoned. I doubled the gravy and left out the sherry. The only thing I would do different next time would be to saute the onions after removing the patties, instead of all at once.

Southern Potato Salad

Finally I've found the perfect potato salad! This will be going in my recipe box. The only changes I made were to omit the celery and use a dash of celery salt instead, and I added some fresh chives since I had them on hand.

Delicious Pineapple Muffins

These muffins were pretty good, though I did make several changes. I stirred the pineapple into the batter, doubled the amount of juice, and also used room temp butter for the topping, not melted. They came out quite moist with a nice pineapple flavor. My only problem was with them sticking badly to the paper liners.

This is a really good sloppy joes recipe. The only changes I made were to add 1/4 cup water and a few splashes of Worcestershire sauce. I will be putting this in my recipe box.

Raspberry Pie II

This pie looked great when I took it out of the oven, but when I cut into it, it was just a soupy mess. And that was even after I doubled the cornstarch and let it rest on the counter a while. It was also a bit too tart, it was better after sprinkling some sugar on top. I would not make this pie again.

Tennessee Rubdown

This was a great rub, we used it on pork chops. I left out the white pepper, and I'm glad I did, otherwise it would have gotten too spicy. This rub will become a staple in our house.

Cabbage Roll Casserole

My husband really liked this casserole, but I didn't like the taste of it as much. I must just like things simpler because what I disliked most were the different spices, I would have preferred the dish seasoned with just salt and pepper.
