Made the recipe exactly as directed, and it turned out great! I can definitely see myself making these meatballs often.

Spicy Chicken and Sweet Potato Stew

Reviewed: May 24, 2009
The flavour of this dish was very nice, I loved the unusual blend of spices. I wanted to use this as a filling for burritoes, so I decreased the amount of liquid, using just two 10oz cans of Rotel tomatoes. After a little simmering, it thickened up nicely and made fantastic burritoes with some cheese sprinkled on top.

Roasted Creole Potatoes

Reviewed: Nov. 3, 2008
I love anything with Creole seasoning, and this recipe didn't disappoint. We can't get andouille sausage here in Canada, so I used a couple of smokies that I halved and cut into thirds. My husband and I had this as a main dish with a side of creamed corn and garlic bread. The blend of spices was perfect.

Bahamian Style Peas and Rice

Reviewed: Jan. 23, 2008
This recipe turned out quite well, and made a LOT for just my husband and I. It didn't taste like what I remember our Puerto Rican neighbor making as a child, which is what I was looking for, so though I probably wouldn't make it again, it was still a good recipe.

Sour Cream Chicken Enchiladas

Reviewed: Jan. 7, 2008
This is a fantastic recipe for enchiladas, and I would definitely make it again. The only change I made was to use Herdez brand salsa Mexicana in place of the jalapeno salsa, and it still provided plenty of heat. The sauce is definitely what makes this dish, I even kept a little aside to use as a dip with tortilla chips. My (and husband's) only complaint is that the onion in the filling was still crunchy after baking, so I'd leave that out or maybe use green onions.

Baked BBQ Fried Chicken

Reviewed: Dec. 17, 2007
Wonderful recipe! Though I'm from the South, I've never made fried chicken before b/c it seemed a bit daunting, but this was so easy. The smell was enough to bring my husband into the kitchen to see what was cooking! My dad makes an almost identical dish except he uses boneless pork loin and slow cooks it in the oven with the bbq sauce.

Roasted Red Pepper Cream Sauce

Reviewed: Nov. 25, 2007
I served this sauce over ravioli and my husband and I both thought it was really good. I chose not to puree it, and I'm glad I didn't, I liked the little chunks of pepper. I would definitely make this sauce again.

Cabbage Soup II

Reviewed: Nov. 14, 2007
This was a tasty and healthy soup. Very easy too, just throw everything together and let it simmer away. I added two potatoes, peeled, cut in half, and thinly sliced. They broke up during the long cooking time and helped thicken the soup nicely. This made a HUGE pot of soup!

Angie's Dad's Best Cabbage Coleslaw

Reviewed: Nov. 5, 2007
This coleslaw was certainly one of the best I've tasted, and I've already put it into my recipe box. The only problem I found was that there was way too much dressing, the coleslaw was swimming in it. Just half would have been plenty.

Black Bean and Rice Enchiladas

Reviewed: Nov. 1, 2007
I cut the recipe in half and still ended up with five very full enchiladas. Rather than being stuck with half a can of leftover diced tomatoes, I poured the remainder over top of the enchiladas, in place of the salsa called for. I don't think my husband was the biggest fan, but I enjoyed this dish and would make it again.

This has become my favorite breakfast/snack mixed in with vanilla yogurt and sliced banana. I love that it's so healthy!

Crunchy Apple-Pecan Slaw

Reviewed: Oct. 23, 2007
I agree with the previous review, this is one of the best coleslaws I've ever tasted. I substituted walnuts for the pecans only because that's what I had on hand, and toasting them really does add a great flavor to the coleslaw.

Spiced D'Anjou Pear Bread

Reviewed: Oct. 16, 2007
This bread is delicious. The spices made it smell so good while baking, it was the perfect thing for a cool fall day. I made up some honey butter to spread on it, and it was just perfect.

Unbelievable Spinach Calzones

Reviewed: Oct. 11, 2007
I made these calzones for dinner last night and my husband and I both thought they were pretty good. To the filling, I added chopped salami and pepperoni, some red pepper flakes, and I decreased the Italian seasoning by half. Overall, this wasn't one of my favorite calzone fillings(which is too bad, since I had a lot of filling left over), so I probably won't make it again, but I'm glad I gave it a try at least.

Roasted Garlic Cauliflower

Reviewed: Sep. 22, 2007
I think this is the best way I've ever eaten cauliflower, I loved it. My cauliflower was already pretty browned by the end of the 25 minutes, so instead of broiling after sprinkling on the cheese and parsley, I just let it bake for a few more minutes. Great recipe!

Grandma's Corn Bread Dressing

Reviewed: Sep. 21, 2007
I'm still looking for a recipe for dressing like my dad's, and though this wasn't it, it was good enough that I couldn't stop eating it! This is a great recipe that I'm sure I'll make again.

Garlic Butter

Reviewed: Sep. 17, 2007
I used to always use the garlic bread fantastique recipe from this site, until I tried this recipe tonight. Best garlic bread I've ever had or made. I thought the proportions of the ingredients were perfect. I'll be using this recipe again and again.

Bean Soup With Kale

Reviewed: Sep. 17, 2007
This soup was alright, but it just wasn't as good as I was hoping it would be, since its so healthy. Maybe it was the fresh parsley, that seemed to be all I could taste. I've also never had kale before so maybe its an aquiered taste. My husband, however, actually had seconds which surprised me.

Chicken Noodle Soup

Reviewed: Sep. 17, 2007
I cut this recipe down to two servings, so the chicken and vegetable amounts just got eyeballed, but its the herbs that really set this soup apart I think. I loved it, and my husband gobbled it up. Whenever I want to make chicken noodle soup, this is the recipe I'll use.

Appalachian Slaw

Reviewed: Sep. 16, 2007
I thought this recipe was pretty good, though I did find it to be a bit salty, so I added some more sugar to try to balance it out more. I liked the addition of tomatoes and cucumbers. Overall, its probably not something I'll make regularly, but it was nice to try for something different.
