Originally from the Deep South, now living in the Great White North with my Canadian husband.
My favorite things to cook
Traditional Southern dishes, though it can be a challenge finding foods like okra and collard greens in Canada! Growing up in South Florida I was exposed to a lot of Latin cooking too, so I love to make Mexican, Puerto Rican, and Cuban style dishes.
My favorite family cooking traditions
Family get-togethers at the holidays and my dad's fish fries(he always made sure to have my favorite-shark!). Also, going to Georgia each summer for our family reunion and pigging out on good Southern cooking.
My cooking triumphs
When my husband recently put in a request that I make chicken n' dumplings again soon and when he raved over my yellow rice! I'm working on expanding his food horizons.

Spicy Chicken and Sweet Potato Stew
The flavour of this dish was very nice, I loved the unusual blend of spices. I wanted to use this as a filling for burritoes, so I decreased the amount of liquid, using just two 10oz cans of Rotel tomatoes. After a little simmering, it thickened up nicely and made fantastic burritoes with some cheese sprinkled on top.

Roasted Creole Potatoes
I love anything with Creole seasoning, and this recipe didn't disappoint. We can't get andouille sausage here in Canada, so I used a couple of smokies that I halved and cut into thirds. My husband and I had this as a main dish with a side of creamed corn and garlic bread. The blend of spices was perfect.

Bahamian Style Peas and Rice
This recipe turned out quite well, and made a LOT for just my husband and I. It didn't taste like what I remember our Puerto Rican neighbor making as a child, which is what I was looking for, so though I probably wouldn't make it again, it was still a good recipe.
