This a delicious bread and I found it easy to make. I used this fast rise yeast and it worked fine. I also lessened the sugar and kept my rising bowl warm. Think I could have let it rise a little longer than the recipe and it took 40 minutes on the second rise.
Most commercial breads and flours have a chemical called Bromide in them (usually packaged as dough enhancers, labeling not required except for in CA) - which has been outlawed in the EU and Canada for it's health risks (cancers, thyroid issues, goiters), but not here. You can buy flour without Bromide - King Arthur brands is Bromide Free and most organic flours are as well.
