About this Cook
My favorite things to cook
I love to bake. Cookies are my specialty however I am always looking for new things to make. My husband is allergic to dairy and I have a gluten and soy intollerance so I am always on the look out for new and exciting ways to make our favorite recipes.
My favorite family cooking traditions
My favorite holidays are Thanksgiving, Rosh Hashana, Yom Kippur and Passover. I love these because my mother used to make the best Tzimmes( sweet potato, carrot and brisket casserole), matzo ball soup and stuffed cabbage for the Jewish Holidays and the most wonderful turkey for Thanskgiving. Now that she is gone it is up to me to carry on these deliscious traditions.
My cooking triumphs
My latest cooking endevours have led me to the world of gluten free cooking. I have figured out how to make my husband's favorite Lemon Squares not only dairy free but gluten and soy free too.

Hasty Chocolate Pudding
This is the best chocolate pudding I have made with a milk substitute. I used half almond milk and half coconut milk coffee creamer. It turned out absolutely wonderful. I poured the pudding into ice pop molds and it all took less then 5 minutes. I can't wait for them to freeze.

Quick Peanut Butter Cookies
I love this recipe. Today I made them with brown sugar ( I ran out of white sugar) and added gluten free dairy free soy free nut free chocolate chips. They turned out perfectly ooey and gooey when warm and cooled nicely into a soft and chewy delight. I highly recommend the brown sugar and chocolate.

Chocolate Chip Muffins
I followed some of the other reviews and added extra milk and oil. I also made this gluten free by substituting an all-purpose flour mix with xanthan gum already mixed in. It came out so well that you could not tell it was gluten free.
