Bodega Bay Cioppino
Wow. Delicious and healthy. The only changes I made was substituting mussels for clams -- they were on sale -- and adding some bell peppers and hot peppers in danger of being forgotten. Rounded it off with a salad of kale an chard and some home made fettucini Alfredo.

Italian Kale
Love kale. This recipe is pretty basic. The only thing I would suggest is keeping the leaves wet before adding to the pan. This will give you a few minutes of steam to help cook the greens. I also hollowed out a space between the kale when it was almost done, and sauteed the garlic first, before adding the balsamic vinegar.

Sauteed Rice with Kale
Great recipe... though I halved the rice, altering the rice to veggie ratio. I also and used brown rice. I will make this again since I love kale, and yet am getting tired of preparing kale in the same old ways. This one is a keeper.
