Baked Ziti with Sausage

I have a tiny, petite, little 20 month old daughter who weighs 20lbs soaking wet and holding a brick... At least, she did before I made this. She ate what can only be described as disturbing amounts of this ziti. Oh, the adults all liked it a lot too!

Kristen's Awesome Oatmeal Cookies

Okay, so I had an interesting experience with these cookies but when it was all said and done I still give them 5 stars. I used butter like a lot of other reviewers. I avoid using shortening whenever possible. I also added chocolate chips but I kept everything else the same. I even put in the cinnamon. With the first dozen I had the same problem that some other reviewers had. I left them in WAY longer than 15 minutes because they were nowhere near done... They just kept spreading out until they were lacy, flat and the bottoms were turning dark but the tips were uncooked. Then when I finally took them out they wouldn't come off of the pan so I ended up with a bowl full of crumbly cookie pieces. Delicious crumbly cookie pieces, I might add! For the other 18 cookies I turned the heat up to 375 and only put in one pan of 6 cookies in at a time instead of two pans. After 15 minutes they were still holding their shape pretty well and baking nicely so I flattened them with a spatula and baked them for another 2 minutes (I like my cookies crunchy, not soft). They came out perfectly and were not hard to get off of the pan. I have no idea what exactly went wrong with the first batch but I'm pretty sure it was due to either my oven or user error. It doesn't matter because they tasted delicious and we ate them all anyway!

Oven Fresh Seasoned Potato Wedges

Delicious! I baked them a bit longer than recommended and even put the broiler on for a couple of minutes because my husband likes them extra crispy.

Slovak Stuffed Cabbage

I had never made anything like this before but the picture caught my eye and I've been looking for some new recipes. The usual rotation can get old. I love cabbage so this was right up my alley. It turns out that my 18 month old loves it too because she couldn't get enough of it. (I was pleasantly surprised that she likes sauerkraut!) It turns out that this is a good thing because it looks like we're going to be eating leftovers for a few days. This recipe makes a lot of food! I made it exactly like the recipe said. Unfortunately this won't be making it into the rotation because: A. It is not difficult but it is time consuming and with 2 little ones at home I try to make simple things. B. Hubby is not as adventurous as me and our daughter and so he wasn't a fan of this dish. (I didn't take any stars away on account of my husband's bad taste in food.) ;P All that being said, I'm glad I tried it and sometimes it is worth it to spend the extra time to make something special!

Swedish Meatballs (Svenska Kottbullar)

I was getting a little tired of the usual rotation (you know how it is). So I did a little searching to find a recipe for something that I've never made before and I came across this recipe. I loved it, my husband loved it and even my 1.5 year old loved it. I didn't change the recipe any but I will admit that I'm not one to be too concerned with accuracy when measuring out ingredients, especially spices. I served it over egg noodles and it reminded me of a beef stroganoff with a different flavor and a different type of meat. I would recommend this recipe.

Spicy Scarborough Chicken Marinade

I marinated some thin sliced, boneless, skinless chicken breasts in this for about 4 hours. Then I skewered them on kebabs and my husband grilled them. The only things I changed were: I used a jalapeƱo instead of a habanero because I have so many and I need to use them before they are bad, and I added a splash of Worcestershire sauce. The marinade smelled heavenly and tasted delicious from what I could tell... But mostly what I tasted was charred meat because that's what happens to any food left alone for too long with my husband and a grill... I think it would have been 5 star otherwise. So I'll have to try it again and keep better tabs on the king of the grill. ;)

Homemade Black Bean Veggie Burgers

I didn't think my husband would be interested in a veggie burger, he's definitely carnivorous, but he loved this and got excited that we had leftovers and so we ate these twice in one week. I did add some carrots, corn and green beans that I put in the food processor just because I wanted to get some extra veggies in there. Of course the vegetables that I added meant that I had more volume but it still went farther than I thought it would. It made 4 HUGE patties. I seriously think i could have made them half as big. I baked 2 in the oven and froze the other 2. They stayed together better after being frozen. Either way they were tasty!

Delicious. I added some red and green bell pepper in it because I had some left over that I needed to use before they went off. Simple recipe that did not disappoint!

Burgundy Pork Tenderloin

I browned it before baking but other than that I followed the recipe. I used Franzia Merlot instead of a burgundy (yeah, I'm fancy). I thought it turned out nicely. I like the taste of red wine in my food but I can see how you might not like it if you don't like wine...

Lemony Garlic Shrimp with Pasta

This is so simple and yet every bit as good as what you will pay a lot of money for at a fancy seafood joint. With the right bottle of wine and setup you could really impress a date. My husband doesn't need to know how easy it was to make, right?

Cabbage and Kielbasa

I just went ahead and used Boar's Head sauerkraut instead of cabbage and wine/vinegar and of course served it with spicy mustard! My husband was skeptical but he tried it and discovered that he really likes it.

Southern Pulled Pork

I've made pulled pork in the crock-pot many times in many different ways, some more successful than others. This is up there in my top two favorites. It was a hit with the hubby too. It works really well for when you are serving to people who don't agree on sauce because it is not cooked in any so I can have my spicy southern and my husband can have his mustard based.

Fettuccini Carbonara

My husband wanted to try this. It was a little too rich for my personal taste. I remember thinking that I would never put that much bacon into something but I wanted to make it per the recipe. I should have listened to my gut (no pun intended) because it made me physically sick (bad acid reflux because I was very pregnant). I still give it 4 stars because my husband really liked it and it turned out exactly like it was supposed to. It is one of the truest to traditional carbonara recipes I could find... it was my own fault for eating rich, creamy, greasy comfort foods while pregnant.

Quick and Easy Vegetable Soup

I made a big batch of this and split it up into portions for my husband to take to work for lunch. Throw some browned and drained ground beef in it and some okra and he swears it could be his grandma's "secret recipe."

Slow Cooker Chicken Marrakesh

My husband and I loved this! Sometimes I find myself in a cooking rut where a lot of the food we eat has similar ingredients and spices, especially if it comes from the crock pot. This recipe breaks that cycle. I pretty much made it true to the recipe except that I really don't measure things out so I probably put more spices in than it called for.
