Raspberry and Almond Shortbread Thumbprints

Amazing recipe! These cookies disappear FAST. - I substituted vanilla extract for almond (personal preference.) - the second time I made these I skipped the glaze and they were delicious both ways. Just make sure that you use cold butter and blend the dough thoroughly to prevent the cookies from spreading.

Mint Tea Punch

I didn't have any lemon or orange juice, so I substituted 1 cup of apple juice instead. I used fresh spearmint and pineapple mint from my garden and about 1/2 cup of sugar. It was delicious!

Honey Wheat Bread I

This is truly the best wheat bread I have ever made. I don't have a food processor, so I do all of the mixing and kneading by hand. Everyone in my family loves it.

Creamy Rice Pudding

This tastes wonderful! I was a little worried about it thickening, but I followed the instructions (except I didn't add any raisins) and it came out perfect. It's especially good with cinnamon.

Slow Cooker Chicken and Dumplings

Everyone in my family loved this recipe! I made it using chicken breasts, (not boneless and skinless.) I substituted my own biscuit dough, used cream of mushroom soup and substituted chicken broth for the water. Also, after reading the reviews, I decided to put the biscuits in at the very beginning and let them cook the entire time. It was SO good. The biscuits were done and the chicken was tender (so tender it literally fell right off the bones.) Best of all, it was EXTREMELY EASY!!!

Zucchini Cornbread Casserole

I really liked this recipe. So did my family, except for my little sister, but she's a picky eater. This is a great zucchini recipe and one that I've been using a lot. My only problem with it is that it tends to be "gooey" in the middle and dark around the edges.

Texas Ranch Chicken

I love ranch salad dressing, but I have to admit I was a little nervous about this recipe. Not any more! It was so delicious. Even my sister, who generally doesn't like chicken, enjoyed it. This is a wonderful recipe and one that I will make again and again.

Orange Cake

This was wonderful! I made two 9" round cakes and gave one away to neighbors. That was a BIG mistake; I could have eaten both of them! This is now officially my favorite cake. The glaze is VERY SWEET, but I like sweet things.

Easy Chicken Breast

So good and so easy! I used cream of potato and cream of chicken soup because I'm not a big fan of celery. I also substituted apple juice for the white wine and used light sour cream. Yummy! Next time I think I will cut back on the sauce though, because I found that the chicken was almost too "smothered." Thanks!

Cheese Vegetable Soup I

YUMMY!!! I skipped the hot pepper sauce and cut back a little on the celery and carrots (just a personal preference.) I added a little more onion, only one beef bouillon cube and two large potatoes. I tried it before I added the cheese and loved it so much that way that I left the cheese out! I recommend it both ways.

Apple Dip

This recipe was WAY too sweet and the vanilla flavor was overwhelming (even after cutting it down to a teaspoon.) I'd recommend using 1/4 cup sugar and 1/2 teaspoon vanilla extract. With those changes, I think this is a terrific dip - creamy, not too sweet and with a nice "hint" of vanilla...a marvelous way to make an apple more interesting!

Winter Lentil Vegetable Soup

This was a big hit with everyone in my family. It was very easy and the sort of meal where anything goes...I used brown lentils, diced tomato, no curry powder, etc. It's the lovely sort of soup where you can through in just about any kind of vegetable. I'm not usually a big lentil or vegetable soup fan, but this was surprisingly good. The leftovers were good for lunch the next day too although there wasn't a whole lot of broth left.

Beef and Biscuit

FANTASTIC! My whole family LOVED this recipe. I recommend doubling the recipe because after the 5 of us finished, there was only one piece left and you will regret not having leftovers. I cut back on the spices and substituted garlic powder for garlic salt. I used butter-flavored biscuits, mild cheddar cheese, light sour cream, 1 lb. ground beef and no green chile pepper. It was SO easy and delicious; I am definitely going to make this one often!
