Easy Meatloaf

As always, I didnt leave this recipe alone. I added 3 pieces of chopped crisp bacon to the meat mixture and I used the grease to saute the onions with a some Mrs.Dash. I also added 3 splashes of Worcestershire sauce and because I didnt read the instructions I added a tbsp. of brown mustard to the meat. In addition, I used seasoned breadcrumbs in place of plane. I doubled the ketchup and brown sugar but only used about 1 1/2 tbsp. mustard in the topping. Baked in a loaf pan and not free formed this was a wonderful meatloaf! Its my new go-to recipe for meatloaf.

Megan's Granola

Ok! Its just me eating this so I made half the recipe and it still makes alot. I used what I had on hand which was sunflower seeds pumpkin seeds and sliced almonds and ground flax seed instead of wheat germ. I left out the brown sugar and added just a bit more honey plus 1/2 c. pumpkin apple baby food because I like it more moist than crunchy. I love cinnamon so I added a bit more than the recipe called for, it wasnt overpowering, and some fresh nutmeg and ginger (I eyeballed both). I think it came out perfect! Not too sweet, not too mushy or crunchy. I did leave it in for about 20 minutes longer but I think that may have been because of the extra moisture.

Classic Peanut Butter Cookies

I added an extra 1/4 c. flour and put in about 1/3 c. crushed peanuts(I accidentally bought smooth instead of crunchy pb!)and these came out beautifully!! About 9.5 minutes was the perfect time for them, brown on the bottom but still soft and chewey. Everyone loved them!!

Spring Lime Tea Cookies

Very good but a little too soft and crumbly! As a disclaimer I added a bit more lime juice to the dough and I eyeballed the ingredients for the icing to my taste and used powder sugar. I left them out overnight and the icing seemed to set ok but I live in a dry climate and that may have helped. Next time I will add a bit more zest to the dough and use a full 2 cups of flour.

Wonderful! Ive never had anything like this so I had no expectations before I made it. And I will definitely make this again. I think next time I will add a bit more vinegar but the amount of sugar was fine.

Summer Garden Crustless Quiche

Perfect base recipe! I never leave anything the way it is written which sometimes works but often times it doesn't. In this case it did! I used the full 5 cups of kale, 1/2 cup carrots, 1/2 cup shredded zucchini and about 1/2 cup tomatoes. I also added some fresh thyme a little bit of mustard (1 1/2 tsp ish) and extra pepper. They taste wonderful even though I forgot to add the cheese! I think they would be even better with a little bit of salsa on top. Also, I baked them in medium sized muffin tins because I want to freeze them for quick snacks later so the cooking time was about 30 minutes. This is going in the recipe box!!!

Cream Cheese Cookies I

This is a great base recipe! I made chocolate cheesecake cookies with my cookie press and they came out wonderful! Even my boyfriend (who doesn't like cookies, which is nuts, who doesn't like cookies???) loved them!! I used 8 oz. of cream cheese, 1 and 3/4 cup flour, 1/4 cup unsweetened cocoa and at the last minute I added a splash of Kahlua so I added 2 more tbsp of flour.This is absolutely going in my recipe box at home!! Also, I only had them in for about 11 minutes and that was enough. I wanted them soft like cheesecake :)

Raspberry and Almond Shortbread Thumbprints

These were lovely! I used 1/4 cup of almond flour in addition to the 2 cups of flour and they came out fine. I also used blueberry preserves and added a little bit after they were baked because I was afraid to put in too much to begin with. Ive made these before (another recipe) and I always overfilled them and made a huge mess!
