I've made this recipe many times (as is, but with some seasoning) and have always liked it. The most recent time I made it, I made the following changes and LOVED it. I substituted one can of cream of mushroom and one can of cream of celery soup for the cream of chicken soups. I used one can of chicken stock instead of water (you might need more stock, my crockpot is on the smaller side). In addition to the butter and onion, I added diced garlic (two cloves), about a cup of halved baby carrots, a handful of frozen peas and a diced yellow bell pepper. I seasoned everything with garlic salt, black pepper, creole seasoning (~1 tsp) and greek seasoning (~1/2 tsp). The creole seasoning adds a little bit of a kick, which I like. I put the chicken in frozen and cooked everything on high for four hours, then added ONE can of biscuits and cooked on high for another hour. The chicken and dumplings were perfect and the veggies were very tender, but not mushy. I will be making it like this from now on! So easy and so good--5 stars with the modifications! A great base recipe.
