Crispy Chicken Strips

These are so good! You can easily customize the flavor of the strips to your tastes. I usually add some creole seasoning (I use Tony's), some garlic salt and some thyme. They're also great leftovers--I love them on Hawaiian rolls with some mayo. I recommend using your oven or toaster oven to warm them up so they stay crispy.

Strawberry Avocado Salad

I LOVE this salad. I could eat it all day, every day. It's fabulous as is, but because I like to eat it so much, I've started subbing all of the sugar for honey, as some other reviewers have suggested. It is still just as delicious! I've also subbed other types of fruit for the strawberries depending on what's on sale or what I have on hand--blueberries are probably my favorite alternative. Highly recommend!

Slow Cooker Chicken and Dumplings

I've made this recipe many times (as is, but with some seasoning) and have always liked it. The most recent time I made it, I made the following changes and LOVED it. I substituted one can of cream of mushroom and one can of cream of celery soup for the cream of chicken soups. I used one can of chicken stock instead of water (you might need more stock, my crockpot is on the smaller side). In addition to the butter and onion, I added diced garlic (two cloves), about a cup of halved baby carrots, a handful of frozen peas and a diced yellow bell pepper. I seasoned everything with garlic salt, black pepper, creole seasoning (~1 tsp) and greek seasoning (~1/2 tsp). The creole seasoning adds a little bit of a kick, which I like. I put the chicken in frozen and cooked everything on high for four hours, then added ONE can of biscuits and cooked on high for another hour. The chicken and dumplings were perfect and the veggies were very tender, but not mushy. I will be making it like this from now on! So easy and so good--5 stars with the modifications! A great base recipe.
