Spicy Pear Cookies

After a dismal attempt at making pear muffins (turned out way too moist), I made a tamer version of these Spicy Pear Cookies. I subbed the raisins with shredded coconut bits instead and left out the ginger & walnuts. Brought some into work this morning and they seemed to be a hit! I am a very novice baker/cook, so this easy recipe and its tasty result really made me feel just a bit more capable in the kitchen, haha.

Bailey's Sundae Coffee Drink

I didn't have egg noodles or peas, so I had to sub penne pasta with broccoli, but otherwise it was quite easy and satisfying!

Chicken Nacho Bake

Pretty satisfying! I added some chopped tomato and avocado slices with cheese during the last ten minutes of baking time, which ended up making this recipe a little bit more filling & tasty to me.

Ch-ch-ch Chia Seed Sugar-Free Chocolate Pudding

The walnuts and dried apricots made it a bit too chunky for my liking, but the second batch I made without those pieces was creamy & delicious! Try coconut water instead of just plain water, too.

Pile High Snack Stadium

Super-fun! I have seen many different versions/variations of this type of recipe, including the Pillsbury products edition, and I love this one because you can also refer to the Allrecipes video on making it. My friends & family thought this was so clever, and we had a blast "demolishing" it bite by bite! To make things a little easier, I simply surrounded the stadium with stacked plastic cups for guests' snack-filling, instead of making tons of sandwiches. =)

Easy Lasagna II

I'm still a beginner when it comes to cooking and this recipe was pretty straight-forward, which I appreciate! I'd add more spaghetti sauce instead of water, but overall very yummy, hard to go wrong.
