Cheesy, Low Carb Stuffed Mushrooms

Yummy! Now that I've made them and know how quick and easy they are, I'll def make them again for a quick and easy lunch or eavey a late nite snack when I need a low carb snack!

Mexican Casserole

heres my updated version of this recipe. To the beans and corn I added 4 oz of cream cheese. I used a can of fire roasted tomatoes instead of the salsa. I also used shredded rotisserie chicken. That way I had no need for the oil. I also added some chopped cilantro and cumin to the taco seasoning. My family loves cheese so I added a cup of mexican cheese to the chicken mixture before baking. Cool ranch or nacho tortilla chips add a good kick crumbled over the mixture before topping with cheese and baking. I made mexican rice and corn bread as someone else suggested. We layered the chicken mixture over the rice. For condiments I made guacamole, and set out sour cream and salsa.

This one is yummy. The lime and the cilantro must be fresh. It makes a real difference. I usually use the whole can of rotel.

ran out of the can stuff and thought how different can it be? ALOT The old cliche, I'll never go back to the can is true! This was a great recipe. I did use garlic and onion powder because of time constraints. My family has a new favorite sloppy joe! Thanks Jill.

Potato Breakfast Casserole

We really enjoyed this recipe. The potatoes where a nice change from the usual egg and bread breakfast casseroles. It was hard to judge what "4 russet potatoes" would equal. I must have used to big of potatoes because there really wasn't enough egg. I think next time I'll use 2 cups of diced small potatoes. I also used Italian seasoning instead of oregano and put it in with the potatoes and bacon.

10 Minute Zesty Salsa

This was my second try at home made salsa with home grown ingredients. It was the best! The flavors melded together perfectly. There was no acidiy tomato taste like my first try. I will add a little more jalapeno to it next time. I think because my peppers where so small, they were not very hot. I like a little bit of a kick to my salsa but I like to also get the salsa taste. I hope it tastes as good after being canned. Now that I've found the perfect recipe, I'm going to try canning. Thanks Kim, this is a keeper!

Thai Noodles and Chicken

This was really good. At first taste before the chicken and cabbage where added I was a little worried about the strong Lime flavor. As one put it,"it was a little off". But after making this my own by adding garlic, green onions and green and red peppers, the flavors all blended really well and everyone loved it. Like everyone else I did have to add about a cup of the water that I boiled the chicken and then cooked the noodles in. It gave it a nice smooth taste. Next time I'll grill chicken breast whole and use the noodles and veggies as a side dish.

Chicken Tinga Tostados

This was so much easier to make then I had anticipated. I did add the cinnamon that someone suggested.And instead of chipotle peppers in sauce I used the chipotle salsa. used the whole can and found it gave a real kick without being to much. And no chopping. Next time (And there definitely will be a next time!) I may add some pepper strips with the onion.

Restaurant-Style Tequila Lime Chicken

I've been using this as my recipe for tequila lime chicken for quite some time now. Its never let me down when it comes to rave reviews from my guests. This last time I made it though, I ran out of salsa and with no time to make the long version I substituted a yummy jalapeno Greek yogurt dip from Costco, Wow, it was awesome. I'll be doing this from now on. It was really excellent. Gave it a nice little kick.

Too Easy Peach Cobbler

This was pretty good after remaking it. I took the suggestion of several others and cut way back on the sugar. I cut my bread into bite sized pieces and dipped them in a french toast type mixture of milk egg sugar and cinnimon. I layered it over the peaches and baked for the same amount of time. If you're using canned peaches make sure you only use about half the juice that comes with it.

not a real sweet pancake like I'm used to but good none the less. We had a few left over that I saved for another day. I felt good knowing I was eating something healthy the next morning when I was on the run and no time to make a good breakfast!

Slow Cooker Buffalo Chicken Sandwiches

wow, I found these to be WAAAAAY spicy, and I like my food on the spicy side. I did put a small amount on a Trisket added a big slice of cheddar cheese and popped them into the toster oven long enough to melt the cheese and ate it that way.

wow, were are the veggies for this recipe. It seemed awful soupy to me. I liked it much better once I added a 16 oz bag of brocoli, cauliflower and carrots to it.Rating is for recipe without the veggies added.

Chocolate Chip Orange Zucchini Bread
