Carrot Fritters

Very yummy and easy to make! I didn't have onions, so I just used carrots and and sliced red pepper instead. Also used the batter with thinly sliced sweet potatoes. A good way to use up left over veggies~ It's worth noting that it makes a thicker batter that isn't super crispy. It does have a bit of a crunch, but the dough is more like a fried bread.

Filipino Avocado Milkshake

Delicious! Creamy and refreshing. I didn't have any ice cube handy, so I subbed in a small ripe frozen banana cut into chunks instead. I also cut the sugar to about 1 1/2 tbsp - 2 tbsp bit because of the banana.

Slow Cooker Pulled Pork

Absolutely delicious and totally easy! I used a 1.8kg pork shoulder and a bottle of root beer (591mL). Poked holes in the top and bottom and let it cook overnight. Drained it when I got up and put it back in the slowcooker, then removed the skin and bones. Shredded it up with a fork, then mixed in the barbecue sauce and cooked it on low for another hour. Definitely going to make this again.

Strawberry Freezer Jam

Very delicious, though admittedly on the sweet side. Much better than your typical store bought in my opinion and super easy make! A 2lb container of strawberries comes out to about 2 cups mashed for anyone's who's curious. I also bought some low sugar pectin to make blueberry freezer jam, using the instructions inside, and it's worth noting that most of the low sugar pectin jams use more the fruit than regulars (in the case of strawberry jam, 4 cups instead of two). It may vary from brand to brand- I was using Certo, but save yourself an extra trip to the store by making sure you have enough!
