Leek and Fennel Soup

Really great soup, and pretty easy to make as well. I made a few modifications to the original recipe to get it perfect: First, I did puree about 1/2 the veggies to get a creamier mixture. And I added some cream as well. Next, I used 4 cups of vegetable broth, 2 cups of water, and 1 vegetable bullion cube. Finally, I added some cayenne pepper. This soup was a hit. It was filling, had a nice creaminess to it, and had a kick at the end with the pepper.

Chili Seasoning Mix II

Key Lime Pie VII

Delicious! This was probably one of the easiest things I've made in terms of a dessert, and yet so good!!! I did use actual key limes instead of the juice - about 20 limes came out to 3/4 cup using a garlic pres. And 2 cans of condensed milk was enough. The pin holes were hard to detect, so I just baked it for 12 minutes, and then put it in the refrigerator.

To Die For Blueberry Muffins

Awesome! I've never made muffins before, but that didn't matter as these came out delicious! I followed the recipe exactly, but I substituted milk for Lactaid milk. I also added a little vanilla. The big substitution was swapping out regular flour for gluten free flour. I added a 1/4 teaspoon of xanthan gum as well. Don't forget the fresh blueberries were key. The muffins were so delicious and tasty.

Pesto Stuffed Pork Chops

This was a great recipe, but I made some slight modifications! First, I had boneless pork chops instead of bone in. I forgot to pick up some feta, and didn't have any on hand. And I didn't use the red pepper or balsamic vinegar. I had to cook an additional 12 minutes because I had some thick cuts of meat. Aside from those changes, they came out delicious. Nice and moist and packed with flavor. It was so good that I didn't miss the feta at all.

Pan-Seared Chicken Breasts with Shallots

I really liked this dish. It was packed with flavor and was a big hit at my house. I made a few additions. First, I wanted a little citrus flavor, so I added some Limoncello and let it reduce with the wine. For the wine itself, I used a cheap Pinot Grigio - nothing fancy. I also added some portabello mushrooms, and a little corn starch to thicken the sauce.

Red Velvet Cake
