Simple Baked Apples

I left the apples unpealed, skipped the walnuts, used apple cider instead of milk, and patted the top with a little butter before baking. It turned out great and sized up well for a larger crowd! It reminded me of the baked apples we used to get at Stouffer's Sunday brunch.

Sweet and Sour Sauce I

I add pineapple juice to fill up to the 2/3 cups of water as well as some crushed pineapple. Yummy!

Bread Machine Pizza Dough

This is the best and easiest to use pizza dough that I’ve tried. I used half white whole wheat and half all-purpose flours and also added an extra ¼ tsp. of yeast. I ended up with a tasty, chewy crust that held all my ingredients without leaking. It was neither too tough to chew nor too airy. Like Baby Bear, it was just right. Love it!

Butterscotch Oatmeal

For oatmeal, this is mighty fine. I made it exactly according to the recipe and it was delicious, something I don't usually associate with a bowl of mush. It's also a recipe ripe for experimentation - using some artifical sweeteners, adding fruit, trying different baking spices like vanilla, cinnamon, and nutmeg. I also had the kids help out which brought them to actually try the stuff. Not bad for a morning's work.

Baked Brunch Omelet

A hit. I used homemade oatmeal bread, bacon instead of ham, added a little dry mustard and fresh nutmeng, and enjoyed a lovely brunch. Veyr easy and could be made a bit ahead of time, put in the frig, and cooked up before company arrives.

Pizzelles III

I doubled the recipe, added an extra egg, also added some almond extract along with the vanilla, used half white whole wheat and half whole wheat pastry flour, and ended up with a nice, nutty flavor. Using whole wheat flour made the guilt of all that butter seem a little easier to take.

Playgroup Granola Bars

I used white whole wheat flour instead of all-purpose and I threw in four heaping Tbps. of chia seeds. This added tons of nutrition without a single whine. No one was the wiser.

Morning Glory Muffins I

Light Oat Bread

Light, fluffy, a great loaf of bread. It was gone before noon. Even with a larger bread machine, keep the measurements as weritten. In my two quart machine, it still worked better with the measurements found in the original recipe. I did not have luck scaling it up to a larger size.

Best Carrot Cake Ever

I am not a nut person, so I put a few extra raisins in instead. This cake is rich, moist, delicious, and I don't feel all that guilty eating it. For a smoother texture, it's worth the effort of shredding your own carrots and not buying the pre-shredded ones at the grocery store. They come out crunchier. This cake has become a staple at our Easter lunch.
