Potato Cheese Soup

As other reviewers have said, I too, do NOT like swiss cheese. I used it anyway and thought it turned out great! I used chicken broth instead of vegetable broth because that is what I had on hand. I changed the method by making a roux...melt the butter in a pot, whisk in the flour, add the milk and stir over heat until thick. Add the cheese to the milk mixture. Then I added the milk mixture to the potato mixture. It was great!

Spiced Banana Bread

Mine turned out great. I would add nuts (personal preference) if anyone else in my family would eat them. I made mine using half whole wheat pastry flour.

Pumpkin Pie Muffins

I made this as written except I cut it in half. It really did turn out very well for a nice breakfast muffin. For snacks for the kids I might add mini chocolate chips, or a crumb/streusel topping. Perhaps a light cream cheese frosting. You could do all sorts of variations on it just for fun, but it doesn't need any changes the way it is.

Banana Cake VI

I followed exact baking instructions...275 for 1 hour, then freeze. I did have to bake about 10 minutes longer. I omitted the lemon juice. The cake turned out amazing. I have made several banana cakes before, but this one is the best I have made. I cannot imagine a better banana cake. Our personal preference is to serve with a big dollop of whipped cream instead of the frosting.

Chicken Stir-Fry

I loved this. I used frozen stir fry veggies and added cashews and water chestnuts. I served over brown rice. I did not "toss to coat" the chicken, but instead, I added cornstarch, soy sauce, ginger, and garlic powder to chicken broth and simmered for a few minutes. Then I poured the sauce over the sauteed chicken and veggies. It turned out great and was much simpler and less mess.

Zucchini-Chocolate Chip Muffins

I loved these muffins! I'm sure the full amount of sugar would have been great, but I'm trying to cut back, so I only used 1/2 cup sugar and they were still great! I used 1/4 cup grapeseed oil and 1/4 cup applesauce in place of the vegetable oil, and I used whole wheat pastry flour. My kids and husband also loved these muffins.

Chocolate Zucchini Muffins

I thought these were great. I used half whole wheat pastry flour and I used half "pear" sauce (same as applesauce except I made it from pears) and half oil. Next time I will try to use even more of the whole wheat and more of the apple/pear sauce to see if I can't get it healthier. Definately a keeper for me!

Split Pea Soup with Rosemary

This was outstanding split pea soup! It was also easy! I did not add the leek. I used ham istead of bacon, and I used dried rosemary instead of fresh. I did not cook the veggies before. I just threw everything in a big pot all at once and let it all simmer for an hour or more. I loved it.

Cheese Soup with Broccoli

I made this soup exactly as written except I used real cheddar cheese instead of velveeta. I used 1 tsp salt. I loved this soup! It does NOT have the thick consistency of a chowder. If you want that, I would suggest adding more butter and flour at the beginning, but we liked it thin. It had great flavor. Next time I will add a bit more broccoli, but it was great the way it was. Do NOT use "already grated" cheddar...the coating they put on grated cheeses will make it grainy and weird. Also, do not simmer or boil after you put in the cheese.

Buttermilk Oatmeal Waffles

I ground the oatmeal into flour. This thickened the batter a bit and I had to add extra milk. The waffles turned out light and fluffy...just right. Nice, simple flavor. I did use whole wheat pastry flour. Next time I would like to try brown sugar, or cinnamon. I think this recipe is a great base for lots of variations.

Black Bean and Rice Enchiladas

I loved these! I added Monterey Jack cheese. I also added sliced olives on top along with the cilantro just for garnish. I used enchilada sauce instead of salsa and I left out the red pepper flakes. I used black beans I cooked myself instead of canned, and I used Mexican style diced tomatoes. I can't wait to serve these to company. Thanks for a great recipe!

Pumpkin Cream Cheese Muffins

These muffins turned out perfect! I made sure my cream cheese mixture was stiff and I made a well in each muffin for the cream cheese so that it could not run to the sides. I used grape seed oil instead of olive oil and I omitted the pecans. I also lightly pressed the streusel topping into the muffin. My muffins looked so beautiful and tasted fabulous! I got several requests for the recipe!

Sloppy Joe Sandwiches

I made this recipe exactly as written and it was fabulous. Then, for fun, I added 3/4 tsp liquid smoke and it was even more amazing. I'm not a fan of vinegar, but I added it anyway just because it was in the recipe, and the cook is right...don't be afraid of the vinegar.

Caramel Filled Chocolate Cookies

I used regular caramels. They were great right out of the oven, but after they cooled, the caramels were too hard (although the cookie still tasted great). So next time I will try Rolo's. I also can't wait to try York Peppermint patties.

Heavenly Halibut

This was Divine! I made it as stated except I followed the advice to bake the Halibut at 375 for 15 minutes before putting on the sauce and putting it under the broiler. I also drained the liquid (fish drippings) from the pan before putting on the sauce. Since some of the sauce drips off the fish while under the broiler, I served it already dished up on the plates and drizzled some sauce over the fish. Heavenly!!! I don't like spicy so I was questioning the hot pepper sauce, but I added it anyway and it was not spicy, yet still full of flavor!

Frank's Favorite Slow-Cooker Thai Chicken

This is a great kid-friendly and easy meal. Don't expect fancy and amazing thai flavors. Just simple, easy, and good. I only had mild salsa on hand, and I added a bit extra peanut butter. I served it over brown rice that I made with water and coconut milk. I will make it again. I cooked mine on high for about 3 1/2 hours in the slow cooker. Turned out great.
