Blackberry Muffins

I used thawed blackberries, whole wheat pastry flour, and doubled the pumpkin pie seasoning...they all worked great. Based on the reviews that said the muffins were dry, I made my own modifications. I used hot water in place of milk, quick oats in place of rolled, and grapeseed oil in place of butter. My muffins turned out flavorful and moist...I will make these again soon! Another reviewer suggested adding some chocolate chips...I did, because who doesn't like chocolate chips? I won't add chocolate chips to these again...they detracted from the blackberries which were great on their own.

Never Fail Meatloaf

I did reduce the BBQ sauce to 1/2 cup. The rest I made exactly as the recipe says. I did not make or use the sauce at all because my family likes to use plain ketchup with meatloaf. The actual meatloaf turned out awesome! I have been searching for the perfect meatloaf recipe for years and this is it for us! I put a greased cookie cooling rack on a baking sheet and baked the meatloaf on that so the grease drips down. I baked mine uncovered on the "Convect Roast" setting at 325 for one hour. The outside looked over done, but it turned out that the outside had the perfect crust while the inside was soft and moist. Great flavor and texture all around! If you don't have a convect setting, bake at 350 as the recipe states.

Frank's Favorite Slow-Cooker Thai Chicken

This is a great kid-friendly and easy meal. Don't expect fancy and amazing thai flavors. Just simple, easy, and good. I only had mild salsa on hand, and I added a bit extra peanut butter. I served it over brown rice that I made with water and coconut milk. I will make it again. I cooked mine on high for about 3 1/2 hours in the slow cooker. Turned out great.

Pumpkin Pie Muffins

I made this as written except I cut it in half. It really did turn out very well for a nice breakfast muffin. For snacks for the kids I might add mini chocolate chips, or a crumb/streusel topping. Perhaps a light cream cheese frosting. You could do all sorts of variations on it just for fun, but it doesn't need any changes the way it is.

Sloppy Joe Sandwiches

I made this recipe exactly as written and it was fabulous. Then, for fun, I added 3/4 tsp liquid smoke and it was even more amazing. I'm not a fan of vinegar, but I added it anyway just because it was in the recipe, and the cook is right...don't be afraid of the vinegar.

Buttermilk Oatmeal Waffles

I ground the oatmeal into flour. This thickened the batter a bit and I had to add extra milk. The waffles turned out light and fluffy...just right. Nice, simple flavor. I did use whole wheat pastry flour. Next time I would like to try brown sugar, or cinnamon. I think this recipe is a great base for lots of variations.

Sweet Pork Enchiladas

I made this just as written in the recipe. It was just too sweet for us. If I were to try it again, I would use 1/8 cup brown sugar. Or, I would scrap the tortilla and put the rest of the ingredients over lettuce for a nice salad.

Cheese Soup with Broccoli

I made this soup exactly as written except I used real cheddar cheese instead of velveeta. I used 1 tsp salt. I loved this soup! It does NOT have the thick consistency of a chowder. If you want that, I would suggest adding more butter and flour at the beginning, but we liked it thin. It had great flavor. Next time I will add a bit more broccoli, but it was great the way it was. Do NOT use "already grated" cheddar...the coating they put on grated cheeses will make it grainy and weird. Also, do not simmer or boil after you put in the cheese.

Banana Cake VI

I followed exact baking instructions...275 for 1 hour, then freeze. I did have to bake about 10 minutes longer. I omitted the lemon juice. The cake turned out amazing. I have made several banana cakes before, but this one is the best I have made. I cannot imagine a better banana cake. Our personal preference is to serve with a big dollop of whipped cream instead of the frosting.

Chocolate Zucchini Muffins

I thought these were great. I used half whole wheat pastry flour and I used half "pear" sauce (same as applesauce except I made it from pears) and half oil. Next time I will try to use even more of the whole wheat and more of the apple/pear sauce to see if I can't get it healthier. Definately a keeper for me!

Heavenly Halibut

This was Divine! I made it as stated except I followed the advice to bake the Halibut at 375 for 15 minutes before putting on the sauce and putting it under the broiler. I also drained the liquid (fish drippings) from the pan before putting on the sauce. Since some of the sauce drips off the fish while under the broiler, I served it already dished up on the plates and drizzled some sauce over the fish. Heavenly!!! I don't like spicy so I was questioning the hot pepper sauce, but I added it anyway and it was not spicy, yet still full of flavor!

Fudgy Brownies

I made these brownies exactly as written, except I omitted the nuts because my daughter is allergic. They are fudgy and would be very good with nuts. I thought they were very good as written and will make again. They are VERY sweet. I will experiment just for fun next time by adding more chocolate and a tad less sugar. See what happens. Maybe put nuts in half the pan. However, they did take 40 minutes to bake.

Sirloin Steak with Garlic Butter

I made this just as the recipe is written, except I grilled it in a grill pan on the stove instead of a BBQ outstide. I just didn't really like it...I love butter and garlic, but this didn't work for me. I will save the butter and garlic for shrimp or crab.

Potato Cheese Soup

As other reviewers have said, I too, do NOT like swiss cheese. I used it anyway and thought it turned out great! I used chicken broth instead of vegetable broth because that is what I had on hand. I changed the method by making a roux...melt the butter in a pot, whisk in the flour, add the milk and stir over heat until thick. Add the cheese to the milk mixture. Then I added the milk mixture to the potato mixture. It was great!

Broiled Tilapia Parmesan

I thought this recipe was good, just not "the best". My family liked it. I did add Panko like another reviewer suggested. I will make it again using a bit less lemon juice, more panko, and a bit of garlic salt.
