Rick's Special Buttercream Frosting

Reviewed: Apr. 13, 2009
Yep - this stuff is really good! I followed the advice of others and used 1/2 butter and 1/2 shortening (buttered flavored Crisco). Like others, I also only used 6 cups of powdered sugar, not 8. It was still plenty sweet for us. Beat everything for a long time and you can't go wrong. Oh, one last thing...because of the butter and vanilla, this icing has a yellow tint to it. If you need really white icing, just add a few drops of icing whitener (basically white food coloring) and you'll have white icing.

Bacon and Macaroni Salad

Reviewed: Mar. 28, 2009
Very good. I cut the sugar and vinegar in half because it seemed like an awful lot of sugar to me. It was still slightly sweet and tangy which I like. You probably won't need to use all of the dressing. I used about 2/3 of it and it was plenty. Tasted better on the day it's made. Leftovers weren't as good. I'll make this again though.

BUSH'S® Best Black Bean Salsa

Reviewed: Dec. 13, 2007
Quick and easy. I use frozen corn - works better. Fresh lime and fresh cilantro make all the difference. I've received lots of compliments on this colorful, healthy dish.

Best Ever Corn Muffins

Tastes like a cupcake - which is fine with me! Couldn't be any easier to make.

Absolutely the Best Chocolate Chip Cookies

Reviewed: Aug. 24, 2007
This is almost the same recipe as the one on the back of the Toll House Chocolate Chip bags (only difference is using shortening instead of butter). These cookies came out of the oven flat and crunchy. By the third batch I decided not to grease the pan and this helped a little. From now on I'll stick to my old recipe.

Amish Macaroni Salad

Reviewed: May 28, 2007
I think the celery salt (I didn't have celery seed) makes this a terrific macaroni salad. I like that it doesn't taste like noodles and mayonnaise - as macaroni salad sometimes does! I agree with others that less sugar is needed to make this. I also used sweet relish because it's all I had. Otherwise, I didn't change a thing and it's great.

Marinated Baked Pork Chops

Reviewed: Sep. 8, 2006
This is a fast and easy way to prepare pork chops. Our two year old, who likes to dip everything in ketchup, really liked these. I followed the advice of others and doubled the sauce but cut the oil in half (you really don't need much oil). Thanks for sharing.

Grandma Johnson's Scones

Perfect scones in my opinion. Quick, easy, great taste and texture. I followed the directions exactly and then added cranberries and shredded coconut - delicious! Thanks for sharing this one.

Souvlaki

Reviewed: Jan. 3, 2006
My picky husband gave this one high marks. It's one of the few marinades made with soy sauce that doesn't taste like teriyaki. At the last minute I decided to add a tablespoon of sour cream to make it a little thicker. It turned out great. Thanks for sharing this one!

Pizzelles II

Reviewed: Dec. 18, 2005
Perfect! I made some with anise and some with vanilla - both had great texture and taste. They're even better with a little powdered sugar sprinkled on top. Great for cookie exchanges!

Marinated Flank Steak

Reviewed: Dec. 6, 2005
Great recipe! I liked that the soy sauce was an ingredient, but not the main flavor. I only had time to marinate for 2 hours, so I cut up the steak into chucks and made kabobs. Delicious! Thanks.

Best Chocolate Chip Cookies

Reviewed: Nov. 16, 2005
I thought these were fine, but to be honest it's basically the same recipe found on the back of my chocolate chip bag (minus the 2 teaspoons of water). Like other people I had to adjust my baking times because the first batch was undercooked - the second batch a little overdone.

Sensational Sirloin Kabobs

Reviewed: Oct. 13, 2005
I thought this turned out pretty good, but I agree with others who wrote that it doesn't taste much different than regular terriyaki sauce.

Pecan Sour Cream Pound Cake

Reviewed: Sep. 14, 2005
This was my first attempt at making pound cake. I followed the recipe exactly and it was really good. I don't think you need to use less sugar as other people have suggested. Very good as is.

Penne with Chicken and Pesto

This is a quick and easy recipe for something that tastes delicious. I left out the chicken and used farfalle (bowtie) pasta to make a wonderful side dish. Very happy with this one!

The Best Meatballs

Reviewed: Jul. 16, 2005
These were really good! Nice texture and good flavor. Like other people, I used less water and less oil. I followed Geanine's advice and left the lid on the pan while cooking the meatballs - otherwise a few of them started to fall apart. I'll make these again for sure. Thanks!

G's Flank Steak Marinade

Reviewed: Jun. 21, 2005
My husband and toddlers gave this recipe a thumbs up! It's easy to make and it gave our meat a lot of flavor. The only thing I might change next time is a little less soy sauce (personal preference)
