English Muffin Bread

No-Bake Granola Bars

This was GOOD. I added a couple of tablespoons of honey as some suggested. I also just put the pb in with the corn syrup and brown sugar. Omitted the chocolate chips and 1/2 c. of the rice crispies and added 1/2 cup of coconut. Really good, and they are very sweet and chewy, but that's why we love them!

Burrito Pie

I omitted the olives and added some canned jalapenos. I also just spread one can of refried beans right on the tortillas. My husband loved it, and the next day he was so excited to eat it for lunch. Definitely a keeper.

Black Bean Enchiladas

I'm sure this recipe was awesome as is, but I had some extra time so I tinkered around with it. I used homemade red enchilada sauce instead of the picante sauce. I also added some brown rice, canned jalepenos, canned green chiles, and about 1/4 c. sour cream and some salt to the filling. My husband loved it, and like others said, he didn't even miss the meat. This recipe is so affordable. My husband actually stood and and started clapping for me when he finished eating. You have to try this!
