Tiramisu Layer Cake

Reviewed: Feb. 27, 2010
Wonderful cake. I used the 8oz cream cheese, 1/4 cup heavy whipping cream & 2 1/2 Tablespoons sour cream instead of mascarpone since I couldn't find it at the store, anyway it was just as good. Tripled all coffee and liqueur. 2 coffe layers and one regular layer. Easier to use instant coffee instead of the brewed coffee. You don't need to poke holes in the tops of the cakes if you have already cut off the top to make it flat. I served this with French Vanilla Rolled Wafers. Great recipe, thanks!

Waffles I

Reviewed: Aug. 17, 2009
They way I made these turned out great. I made these into all healthy waffles. I used King Arthur's Whole Wheat Flour, Organic Vanilla Soy Milk ( can use the low fat kind, although it's already low in fat!), I used Splenda and doubled it as suggested by others. Instead of oil I used a 4 oz jar of baby food. I didn't have applesauce like others suggested so I looked for a baby food applesauce and only found "Apples & Peaches" but it worked just the same! Then to top the waffles I used Smart Balance Omega with Extra Virgin Olive Oil Butter Spread & Maple Grove Farms Sugar Free Syrup. These tasted pretty much like a regular waffle only WAY healthy. Plus with all the fiber you will feel full after one and stay full for a good part of the day!!

Mom's Zucchini Bread

Reviewed: Jul. 5, 2009
This bread was amazing, my boyfriend, our 2 year old son and I ate a whole loaf while it was sitting on the rack to cool! I did use wheat flour, not white. I used about 3 cups of zucchini and could have used more. I used 1 cup brown sugar, 1 cup white sugar. I also put the crumb topping on 15 minutes before it was done cooking. And the only reason I gave 4 stars is because there were a few changes to be made to the original recipe that I got from other ratings. The result that I came out with is the best, we can't stop eating it!

Corn Dogs

Reviewed: Jul. 2, 2009
This didn't work out at all.. I tried to cut up the hot dogs and deep fry for mini corn dogs.. I froze the batter for 30 minutes, I dried off the hot dogs all the way and all I got was a huge mess. The batter and hot dogs seperated in the deep fryer and I had to scrape it out onto a plate.. looked more like a casserole.. not sure why it went so bad. :(

Pie Crust IV

Reviewed: Jun. 29, 2009
Mine turned out PERFECT. I sliced up a stick of butter instead of shortening and since I do not have a pastry blender I used 2 butter knives to cut the butter into the flour, I also used wheat flour *same taste, much healthier*. I did not use ice water, just cool water and it worked out fine. After I had most of the water in I used my hands to mix it up and roll it out. Then after it was rolled out I did not fold it in half to get it in the dish, I carefully rolled it around my rolling pin and unrolled it over the dish, worked out GREAT!! I used it for a strawberry pie so I definately didn't need to add any sugar to it.

Fresh Strawberry Pie I

Reviewed: Jun. 29, 2009
Quick and easy and turns out great! I did cut up my strawberries because if you do it like the recipe says you have a lot more gelatin than strawberry in your pie. AND I only made one pie and there still wasn't enough gelatin for it, I made out with what I had but could have used a little bit more. I also only used 3/4 cup of sugar and it is definately sweet enough. YUM~!

The Most Incredible Garlic Bread

Reviewed: Jun. 4, 2009
This turned out great, it was quick to make and a very good taste. I sprinkled a little mozerella and cheddar cheese on before putting in the oven, but I would wait until about the last minute to do that because it got brown way quicker than the rest of the bread.

Chicken Fettuccini Alfredo

Reviewed: Jun. 4, 2009
This was pretty good. I just used 4 cups of 1% milk instead of 3 cups milk and 1 cup half and half. Then I sprinkled a little cornstarch in to thicken it up. I also left out the sour cream and mushrooms and tomatoes. I used half mozerella cheese and half cheddar cheese. It turned out nicely. I made it with the recipe on here for "The Most Incredible Garlic Bread" (VERY GOOD!!). I spent a total of 2 hours on this meal.

Tomato Chicken Parmesan

Reviewed: May 27, 2009
I made this for my boyfriend and he really enjoyed it!! I took the others advice and I baked the chicken for 20 minutes, then I put mozzerella cheese on it and baked for 15 more minutes. I did not bake it in the sauce, I put the sauce just over the chicken and spaghetti on the plate and it was warmed up from that. I also double dipped the chicken for extra breading. Pretty easy to make but used a lot of dishes!

Toffee Chunk Cheesecake

Reviewed: May 27, 2009
I have made this probably a dozen times and EVERYONE loves it. I left out a star because it is not cheap to make and also very time consuming. I do think it is well worth it though! One thing I tried to cut down the cooking time tremendously was I made it into a bunch of little cupcakes which really have to be greased first to avoid sticking but pretty much the same concept and only takes about 20 minutes to cook. It was also loved that way! Also since the whole cake is around 10,000 calories I use the 1/3 less fat cream cheese. Tastes just the same.
