Burgundy Pork Tenderloin

Flavorful and tender pork! I used 1c wine (Pinot Noir, I think any light red would work, however I think Cabernet Sauvignon might be too "winey") mixed with 1 cup water for the gravy. The brown gravy packets have a lot of salt in them already which may be why others who substituted with beef broth may have thought it was too salty? It really is a matter of personal taste I guess! Cooking time needed was a bit longer (1 1/2 hrs as opposed to 45 min), otherwise very easy and really delicious.

Four Cheese Macaroni

Ridiculously easy and ridiculously good! If you were wondering, the tablespoon of oil is for when you are cooking the pasta while it is boiling so that it doesn't stick. I didn't add any eggs, used a little more Velveeta (maybe 2/3 of the block) and mixed a bit of light cream to the half and half to make it bit more watery (when it baked it thickened nicely and stayed creamy). I would say for those who found it too dry to add more liquid and bake it for a shorter time. Also added some onion powder to round out the flavors and give it a little more dimension.

Quinoa and Black Beans

This was so easy and delicious - and quick! Its challenging to find dishes that are not only healthy but tasty and simple to whip up. Definitely a keeper for a weeknight dinner. I replaced the vegetable broth with chicken broth and served with sliced avocado. Its also great cold the next day.

Roasted Italian Herb Chicken

Instead of chicken breast I used chicken thighs and drumsticks. As easy as this recipe is, the chicken turned out flavorful and moist. Picky fiance can not stop raving about it. Perfect mid-week meal.

Mr. Janssen's Temptation

I really like anchovies, so I knew I would like this dish -- I could definitely taste them! This dish is filling, easy and cheap. I used 1 Idaho potato, 1 onion, 1 tin of anchovies and about 1/3 pint of heavy cream.

Juicy Steak

As someone who is "culinary-challenged" the steaks were really easy to make. It took a little longer to cook than stated, but I think my cut of meat was pretty thick. My sister, who is a chef, couldn't stop eating it!

Mushroom Risotto

This was my first attempt at making risotto and turned out fabulously. Instead of the milk and heavy cream, I substituted 1 1/4c of skim milk and it was still delicious. Yes, it took a lot of patience and I probably won't make it often, but still a very good recipe.

Amazing Ribs

I used 3lbs of baby back ribs for 2 people (more than enough leftovers). I also used 1 can of Bud Light (what I had on hand) and 1 1/2 bottles of Jack Daniels BBQ sauce. Turned out very good, meat was very tender and flavorful, although next time I probably only need 1 bottle of BBQ sauce.

Very Easy Risotto
