Country Fried Floured Bacon
I soaked the bacon in milk and eggs with a lot of pepper and a little salt. I added a lot of pepper to the flour and a little salt. I double dipped and floured the bacon, so much better. The egg and milk mixture left over I scrambled. Eggs were very good and oh so moist. A piece of toast and breakfast was ready. We ate 3 pieces each, that's only one and a half slices. At three slices for both of us a pound goes a long way.

Basic Ham and Bean Soup
I didn't put in onion, and instead of chopping the ham I put it in the food processor. It flavors the broth better and ham in every spoonful. I use to have to process the meat for my dad since he couldn't chew the ham and continued to do it after he passed away because everything has more flavor with ham.

Scalloped Potatoes with Ham and Bacon
The only thing I did different is instead of cubing the ham I put it thru the food processor. You get ham in every bite and it seems to flavor the potatoes even better. I tried it both ways but processing the ham is the best way. I also do the ham this way for ham and bean soup.
