Apple Pie by Grandma Ople

This is a perfect apple pie (or apple tart as we call them here in Ireland) I made this using a pastry that was 2 parts flour 1 part ground almonds which I blind baked to prevent the sugar mixture from making the crust soggy. I mixed the liquid with the apples and then placed them on the pie crust. I had already made my lattice top on a baking sheet and had it waiting in the fridge ready to sit on top. I put an egg wash on top of the lattice and covered it with tin foil 40 min into baking to prevent it browning too much. This is a very impressive pie - I made a 12" and it looks amazing! It tastes every bit as good as it looks:o) really delighted with this recipe, I know I wont even bother looking up any others from here on. Thank you so much for going to the bother of posting this!

Simple Scones

This is a brilliant recipe! I replaced one of the cups of flour with ground almonds and used maraschino cherries instead of raisins.... totally delish, although they didnt hold there shape brilliantly...I think they were of a slightly wetter consistency than is the norm for scones, maybe I should have used one and a half cups of flour and half a cup of ground almonds??? I cut it into triangles, which you could still tell when they were finished but if I had have used a round cookie cutter I think they would have looked very messy! I will make these again but in a bigger batch next time. Thanks for this excellent and very easy recipe:o)
