Vegetarian Korma

Delicious and mild. I didn't modify recipe much. Of course, the potatoes were boiled al dente prior to adding them to the recipe. Generally, I'm one to add spices, but the mild curry powder and ground nuts combined with the sweet carrots and peas was sufficient for my taste. My boyfriend is not much for Indian food, but he enjoyed it immensely as well. I took another user's advice and added cauliflower and kale. Tomato paste was used instead of sauce. I'd add mushrooms next time I make it!

Chicken Divan

This was delightful! I essentially boiled the chicken on stove top in a deep pan, half full of chicken broth, then used my Magic Bullet to shred the chicken. I loved the texture this gave the dish! I used a bit less of everything as I was only cooking for two, and only one can cream of chicken. Two seemed a bit excessive. I steamed the broccoli, mushrooms and added onion on stove top for about 7 minutes, and combined it with the shredded chicken. I also added double the curry powder, coarse black pepper, and sour cream to the cream sauce. I'd like to add white wine next time! The Boyfriend went back for three servings, so it must have been good. I paired with some twice baked potatoes. It was some much needed comfort food on a rough Monday. Enjoy!

Ethiopian Cabbage Dish

Turned out very well! We've been trying more plant-based meals and this is both savory and filling! Used about 2 tbsp oil and some water instead of 1/2 cup of oil, also added more cumin and tumeric. Someone suggested Ginger which I'll have to try next time!

Curried Chicken

This was a good base, but wasn't enough flavor for me. I added lots more vegetables (mushrooms, zucchini, potatoes, chives and kale) and didn't have to add any more sauce base. Two tsp of curry and a pinch of indian chili powder gave it a nice kick. I also added about a tsp of maple syrup to sweeten it slightly, and it had a nice effect! The end result was almost identical to "yellow curry" which could be ordered at a thai or fusion restaurant. :)
