Hearty Breakfast Cookies

These were great. Everyone at work loved them. I used only whole wheat flour and used flax meal instead of wheat germ. Also reduced the sugar by 1/4. They are great warmed in the microwave and really kept me full until lunchtime.

Tom Yum Koong Soup

This is a must-try. Seriously. Tasted exactly like it came from my favorite Thai restaurant. Sure, it required a special trip to the Asian supermarket and it was a bit spendy picking up all the special ingredients - who knew kaffir lime leaves were $80 a pound?! - but now I can whip this up whenever I get the craving. Like other reviewers said, do NOT substitute if you can help it. You will spend more but it will be worth it - you won't be sitting there thinking it's missing something. I am absolutely sure the tom yum paste made all the difference - it should not be denoted as optional.

Turkey and Quinoa Meatloaf

Best. Meatloaf. Ever. Cooking the quinoa requires a little more effort but it's worth it. We never have leftovers. Meatloaf I don't feel guilty about it and it's freaking DELICIOUS!

Jay's Signature Pizza Crust

This was so good. It did take quite a bit more flour than it calls for. I used a dark-colored pan and pressed it out thin. Pre-baked for 3 minutes and then topped it. Removed it from the pan for the last few minutes and baked directly on the oven rack. The crust was crispy and chewy - just the way I like it!

Italian Country Style Ribs

Wow, I thought this was too easy to be that great but it was delicious! Browned the ribs and threw everything in the crock pot. Added a few minced cloves of garlic and a couple splashes of red wine and let it cook for 8 hours on low. Served over garlic mashed. Perfection!

Banana-Chip Oat Muffins

These are really good! I omitted the applesauce and used just whole-wheat flour. Used chopped dark chocolate bars for the chips, too. Yum!

Dad's Oatmeal Cookies

Just decided to make these since I had a box of Grape Nuts and oatmeal to use up. So much tastier than I thought they would be...simple and delicious. Next time I'm going to try making them bigger and leaving them softer to use in ice cream sandwiches.

Dijon Crusted Halibut

This was yummy. Used light mayo and omitted the horseradish. I prepped the sauce a little early and it became super thick from the bread crumbs absorbing everything, so mix it just before putting it on the fish. Baked it at 400 as others suggested and broiled for a few minutes at the end to really brown the topping. Turned out great.

Slow Cooker Taco Soup

This was awesome and inexpensive--great for me, as I'm a starving college student. Made our apartment smell great and my roommates loved it. Didn't use the can of chile peppers and it didn't seem to matter. Also substituted black beans for the chili beans. Great recipe.

Slow Cooker Beef Stew IV

I'm a college student and my roommates and I loved it! I cut the meat to about 2 lbs. and added a few cubed Russet potatoes. I also only used 1 1/2 onions and doubled the amount of carrots. I didn't have dried parsley, but it didn't matter. We were eating leftovers of this for a week!

Adobo Chicken with Ginger

I made this tonight for dinner and it was great! My roommates and I loved it and it made the place smell so good. I'm a starving college student, so I don't have much in my kitchen--omitting the bay leaves and peppercorns didn't matter. I also substituted 6 thighs for the whole chicken (again, we're poor students here). I'll definitely be making this again!
