Garlic Broccoli

Fantastic recipe!! I did what others recommended and steamed the broccoli, didn't all as much salt but also added some balsamic vinegar. Please note that you don't need to add anywhere near the amount of oil and vinegar as suggested, it ends up an oily mess. I used a few tablespoons of each for 2 heads of broccoli and it was more than enough.

Ultimate Twice Baked Potatoes

This was fantastic! I also browned in pan and then cooked the rest of the way in the oven. Served at a dinner party and was told it was the best meal they've had!!

I also just soaked the lasagna noodles and used a bit less liquid. This was a fantastic meal that was easily reheated the next day!

Jalapeno Popper Spread

Great recipe, very easy to make. I served with crackers once and toasted french bread the next time. Crackers seemed to be the favorite and easier to eat with.

Three Cheese Garlic Scalloped Potatoes

I felt this didn't have that much taste, even after adding extra garlic. I also sliced the potatoes thin with my food processor and they still needed extra cooking time.

Annie's Fruit Salsa and Cinnamon Chips

This was fantastic! The only reason I gave it 4 stars was because of the chips. To me, they were hard to make and didn't taste all that great for the effort. I will use store bought cinnamon chips next time!

Pico de Gallo Chicken Quesadillas

I thought this was a great recipe. I let the pico sit for about an hour before making the quesadillas. I tried baking them in the oven like others suggested, but it never seemed to crisp and come together. Next time, I will definately cook on stove top.

Party Pinwheels

I'd give this 3.5 stars, but I served them at a dinner party and people loved them. I do think they have a bit too much cream cheese, would reduce it a bit next time. You can rinse the olives to get rid of some of the salt as these can be a bit salty.

Calabacitas Con Queso - Zucchini with Cheese

This was just okay, definately needs some spices. I added garlic, a chipolte chile in adobo, and green onions and it still seemed a bit bland. Left out the sugar, didn't add as much cheese. May be okay with some tweaking.

After reading all the great reviews, I was expecting a lot more. This was good, but not spectacular. An easy weeknight meal, nothing I would serve to company. I did serve it with coleslaw on top.

No Bake Peanut Butter Pie

This was really good and easy to make. I used low fat products and chocolate crust. I made one pie and would recommend that you make a bit more of the filling as it doesn't fill up the crust completely.

Amazing Spicy Grilled Shrimp

I thought this was just okay and was expecting a lot more due to all the great reviews. It was definately spicy and I like that you can adjust the spice based on how you like it. However, I found it to be nothing spectacular and prefer the basil shrimp recipe instead.

Apple Strudel Muffins

These were very good. To make a bit healthier, I used 1/2 butter and 1/2 country crock. Also 1 cup white flour 1 cup wheat flour. Good even without the strudel topping, but it does give it an extra kick. Would make again.

Unbelievable Chicken

After reading all the positive reviews, I was expecting a lot more. I marinated the chicken for a day and while it was moist and juicy, it surprisingly seemed to lack flavor. I think there are probably better marinade recipes out there.
