Honey Cornbread

Very good recipe. I made it exactly as it appears and it was delicious. I didn't have cream OR cornmeal and I went out on a limb and used a can of creamed corn instead or cornmeal and and cream. It was PERFECT. Try this variation for a cornier taste!

Broccoli and Cheese Stuffed Shells

This is an excellent and simple dish. I've made it twice and it is MUCH better with fresh broccoli. I took 2 heads (about 1 cup) of chopped, fresh broccoli and sauteed with a little EVOO and 2 cloves of chopped garlic, salt and pepper. I cooked the broccoli until tender but dry (all moisture evaporated) about 10 minutes. This requires a little extra work but makes all the difference. I also used a differed jar of sauce because I'm not a fan of chunky marinara sauces.

Southwestern Pasta Salad

I have made this two or three times and it never lasts long. I do think that adding more lime juice, and a few dashes of red pepper, makes this dish more flavorful. I also included the juice of one orange, which added a nice sweetness to the dish that complimented the corn and black beans, and offset the bitterness of the chili power. If you like Mexican flavors, you will be sure to like this dish!

Country Green Beans

This is an excellent medley of flavors. I modified the recipe little. First, I doubled the garlic to 2 cloves. I supplanted bacon for ham and I cooked the bacon and crumbled and set aside. I added a few pads of butter to the bacon grease and then I cooked onion and garlic first (2-3 mins) until I could smell the garlic. Then I added the green beans, bacon, and spices (I added a tsp of dried basil because it is delicious with green beans). After the beans were a little soft (1 min) I added 1/4 C of chicken stock, covered, and simmered or 15 mins covered. It was PERFECT!

Bernice's Peach Bars

This recipe is so easy and delicious. You can substitute peaches with one large can of your favorite fruit or pie filling. For cherries, mix with 1/2 cup of water before pouring them into the pan.

Pistachio Bundt Cake

Brought this to party and it was a hit. The food coloring is key. I would suggest chocolate glaze (from this site) with crushed pistachio nuts sprinkled on top.

Mouth-Watering Stuffed Mushrooms

This is a delicious recipe. I sprinkle Parmesan, a little cayenne, and dried parsley on top. I also wipe the mushrooms with a moist towel to clean them.

World's Best Lasagna

This recipe has become a staple for me. It's worth the time. It makes way to much sauce but I save it and freeze for a pasta dish later. I have played around with ingredients and I now make it as is. So good!

You can't beat this wonderful quiche! I leave out the diced ham and add a little more crumbled bacon. I always have guests rave about the dish and ask for the recipe.
