About this Cook
My parents are both great cooks with different styles. My dad was from Texas and makes wonderful and rich southern meals. My mom's family is from Oklahoma, where I was born, and also makes great southern food but also loves to make healthy food too. She taught me how to make food healthier and lots of tricks. I got married in May, 2003 and have been experimenting with lots of different recipes. Sometimes coming back to the old standards.
My favorite things to cook
I love sauted squash, summer sausage pasta, and macaroni salad. Grilled chicken and meatloaf. My favorite combination is mozzarella cheese and tomatoes. I love the parmesan chicken recipe I found here and make it regularly.
My favorite family cooking traditions
My dad always made the best in the world cornbread stuffing for Thanksgiving. My new family (my husband) and I love to cook together and experiment with all sorts of meals. We cook a lot of chicken and more recently, Tilapia as it has come into the market as a cheap and healthy fish that's very easy and quick to cook.
My cooking triumphs
My meatloaf is probably the best I've tasted and it can be used for meatballs too. My brushetta salad or pizza salad depending on your add-ins is a hit at most pot lucks as I tend to bring it as my standard.
My cooking tragedies
Ah, which one? I think the worst tragedy is when I cook way too much food and then it gets wasted. That happens a lot because I went from a family of 6 to a family of 2. And most recipes are geared towards 4 people and I always FEEL really hungry when I start cooking. :)

Paella
I used this recipe as a starting point based on the ingredients I had on had and our dietary choices (we don't eat chicken or sausage). It was delicious though and appreciate the fantastic inspiration! These are the changes I made: I used Swai fish as the only meat and followed the directions that applied to shrimp for preparation, shredding it into chunks when fully cooked. I also didn't have (or couldn't find) salt so I substituted tamari. I added frozen peas as well and omitted bay leave because, again, I didn't have them. This is definitely a recipe I will make again and again!! Thank you!

PHILLY Creamy Rice, Chicken and Spinach Dinner
This was yummy!!! My husband and I really liked it. It wasn't your typical chicken and rice dish. It was really good with all the veggies! It definitely needs salt and pepper. I made some changes based on the ingredients I had on hand: I cooked the rice in a rice cooker separately with water instead of broth. I cooked the chicken in the skillet with regular italian dressing and olive oil and added about 3 cloves of minced garlic. I salted and peppered the chicken as well. I cooked that until done and added the cream cheese and spinach as directed. I also roasted a red pepper in the broiler meanwhile. Then cooled and peeled it. I chopped it with the tomatoes and added them at the end until heated. Then I mixed in the rice and topped with parmesan. It was almost like a alfredo sauce with veggies added in. I love hot parmesan spinach dip so this was a great recipe for my husband and I. We will definitely enjoy this meal again!

Best Marinara Sauce Yet
As if this needed another review! I liked it a lot. Subbed out diced tomatoes for stewed and dried parsley for fresh. I skipped the food processor step for a little bit chunkier result. I used some leftover Pinot Grigio. It was delish!
